Hot Buffalo Chicken Sandwiches

Ingredients
  • 4 pieces, 6 ounces each, boneless, skinless chicken breast
  • Salt and pepper
  • 1 teaspoon sweet paprika, 1 /3 palm full
  • 1 teaspoon chili powder, 1/3 palm full
  • A drizzle extra-virgin olive oil
  • Sauce for chicken:
  • 2 tablespoons butter
  • 1/2 cup, 4 ounces, cayenne pepper sauce, preferred brand Frank's Red Hot
  • Bib or leaf lettuce leaves
  • 4 crusty rolls, split
  • 2 cups sour cream
  • 4 scallions, thinly sliced
  • 1/2 pound blue cheese, crumbled
  • Small red onion, thinly sliced
  • 8 ribs celery, cut into sticks
  • 2 large carrots, peeled and cut into sticks
Directions

Heat a large nonstick skillet over medium high heat. Season chicken with salt, pepper, paprika and chili powder. Drizzle breast with a little extra virgin olive oil to coat. Pan grill chicken breasts 5 minutes on each side.

Heat a metal or oven safe glass bowl over low heat and melt butter in the bowl. Add hot sauce to the butter and combine. When the chicken breasts are done, remove from pan and add to the bowl and coat evenly with hot sauce mixture.

Place chicken breasts on bun bottoms and top with crisp lettuce. Combine sour cream, scallions and blue cheese and slather bun tops with blue cheese sour cream. Affix bun tops on sandwiches and serve with remaining sauce for dipping your veggies. Arrange Buffalo Chicken Sandwiches on dinner plates with red onion, celery and carrot sticks.

Delicious, highly recommend. Full of flavor. I made these for my boyfriend and his friends while they watched NFL football - all of them loved it! The only changes I made was that i made them into sliders (cut the chicken breasts in half and mini used slider buns I also used greek yogurt instead of sour cream to make the blue cheese sauce and it was still a hit. We topped with Avocado and butter lettuce. I was told to "make this every weekend" for football snacks. I have been making this dish ever since I saw it on television years ago. I love it and so does everyone I've ever made it for!!! Franks Red Hot is the best sauce! I love the blue cheese mixed with the sour cream however my boyfriend is not partial to blue cheese, so I leave it out on his. He adds ranch dressing to his sandwich instead. This is fantastic, I make this recipe once a month. For my children I just cook the chicken with the spices and don't add the sauce at the end. For the adults in my family, I finish cooking the chicken with the hot sauce and butter to help infuse the flavor a bit. So quick and easy! My husband and I loved it. I substituted the chicken breast for a quarter pound each of rgound chicken breast and ground chicken thighs. I added about a cup of left-over cooked rice to help "glue" it together (found the ground chicken to be much softer than ground beef when formed into patties). It made about 4 medium sized patties. My husband is on the P90X nutrition plan so I altered this recipe a bit. Didn't use butter for the sauce, didn't use salt for the chicken, and substituted plain greek yogurt for the sour cream, and toasted whole wheat bread for the buns. It was still SUPER tasty. I like the sour cream with the blue cheese...gave it a lighter flavor. I did crumble it myself as it sometimes doesn't pick up the flavor through the sour cream if you use already crumbled stuff. I was a little apprehensive. I am not a fan of spicy recipes, but my husband is. We made these for lunch and we were shocked. These were delicious and incredibly easy. Not too spicy for me and a just enough kick for him! We had to subsitute some ingredients for some we already had on hand (we ddn't have Fred's, we just used our regular hot sauce; we didn't have blue cheese, we used feta crumbles and we didn't have bibb lettuce, we used shredded iceberg) and it worked out great. My husband and I are huge wing fans, but we tend to stay away from them because they are so bad for you. Even the buffalo chicken sandwiches we see at restaurants are often fried. Made this a couple times but the first time the sauce had no taste to it. I use 1/4 c Franks, 1 T brown sugar, 3 tea cider vinger, 1 T plus tabasco, 4 T unsalted butter, and 1/2 teaspoon salt. I just melt everything together. Not a huge fan of the dressing but there is nothing wronge with it. Oh I aways take big chicken brest and turn them into cutlets. I watched Rachel make these on her show and they looked so good that I made them for dinner the next night. My husband liked them so much, he asked to have leftovers in his lunch the next day, and then stopped by the store on his way home from work to buy more chicken breasts to make more of them. Our middle son and his girlfriend ate with us when I made them & had to have the recipe, so I printed it out for them. Our oldest son and his girlfriend had a taste of the leftovers the next night and had to have the recipe also.
