Hot Buffalo Chicken Sandwiches

4 servings

  • 4 pieces, 6 ounces each, boneless, skinless chicken breast
  • Salt and pepper
  • 1 teaspoon sweet paprika, 1 /3 palm full
  • 1 teaspoon chili powder, 1/3 palm full
  • A drizzle extra-virgin olive oil
  • Sauce for chicken:
  • 2 tablespoons butter
  • 1/2 cup, 4 ounces, cayenne pepper sauce, preferred brand Frank's Red Hot
  • Bib or leaf lettuce leaves
  • 4 crusty rolls, split
  • 2 cups sour cream
  • 4 scallions, thinly sliced
  • 1/2 pound blue cheese, crumbled
  • Small red onion, thinly sliced
  • 8 ribs celery, cut into sticks
  • 2 large carrots, peeled and cut into sticks

Heat a large nonstick skillet over medium high heat. Season chicken with salt, pepper, paprika and chili powder. Drizzle breast with a little extra virgin olive oil to coat. Pan grill chicken breasts 5 minutes on each side.

Heat a metal or oven safe glass bowl over low heat and melt butter in the bowl. Add hot sauce to the butter and combine. When the chicken breasts are done, remove from pan and add to the bowl and coat evenly with hot sauce mixture.

Place chicken breasts on bun bottoms and top with crisp lettuce. Combine sour cream, scallions and blue cheese and slather bun tops with blue cheese sour cream. Affix bun tops on sandwiches and serve with remaining sauce for dipping your veggies. Arrange Buffalo Chicken Sandwiches on dinner plates with red onion, celery and carrot sticks.

    This was a great lunch. I will definitely making it again.
    Delicious, highly recommend. Full of flavor. I made these for my boyfriend and his friends while they watched NFL football - all of them loved it! The only changes I made was that i made them into sliders (cut the chicken breasts in half and mini used slider buns I also used greek yogurt instead of sour cream to make the blue cheese sauce and it was still a hit. We topped with Avocado and butter lettuce. I was told to "make this every weekend" for football snacks. I am definitely keeping this recipe and will make many times again.
    I have been making this dish ever since I saw it on television years ago. I love it and so does everyone I've ever made it for!!! Franks Red Hot is the best sauce! I love the blue cheese mixed with the sour cream however my boyfriend is not partial to blue cheese, so I leave it out on his. He adds ranch dressing to his sandwich instead. I love the way the recipe has it. Its very easy to make and tastes amazing. I crave this dish!!!
    The chicken was very good but im not a fan of the blue cheese instead i added chipotle and some mayo and tomatoe and ranch and it was amazing highly recommend the chicken part.
    This is fantastic, I make this recipe once a month. For my children I just cook the chicken with the spices and don't add the sauce at the end. For the adults in my family, I finish cooking the chicken with the hot sauce and butter to help infuse the flavor a bit. I don't bother with making the sandwiches, just cut the chicken up and make it into boneless wings with a side of celery and carrots.
    PERFECT!! Everyone in the family (from my picky husband to my 4 year old loved this recipe. This is going into our dinner rotation. I never knew Buffalo Chicken was so easy and I'm kind of mad at myself for not trying this sooner!
    Yum - A Great Sandwich! We had it two nights in a row. The only changes I made were using an indoor grill pan, hollowing out the bread, and only topping with avocado. Easy and delicious - will be a regular dish in our home.

    WOW!!! This sandwich is so easy and just one week my husband told me to make it for him 3 times!!!! I thought using blue cheese with sour cream was weird but I was very glad it was so delicious!!! DEFINITELY A KEEPER!!! =
    So quick and easy! My husband and I loved it. I substituted the chicken breast for a quarter pound each of rgound chicken breast and ground chicken thighs. I added about a cup of left-over cooked rice to help "glue" it together (found the ground chicken to be much softer than ground beef when formed into patties). It made about 4 medium sized patties. I followed the rest of recipe and dinner was ready in a pinch!
    My husband is on the P90X nutrition plan so I altered this recipe a bit. Didn't use butter for the sauce, didn't use salt for the chicken, and substituted plain greek yogurt for the sour cream, and toasted whole wheat bread for the buns. It was still SUPER tasty. I don't know how the recipe tastes when cooked the way it's listed on the site, but the way I prepared it got a RAVE review from my husband. Very tasty! I love that I could make it healthier without sacrificing taste. Thanks for a great base recipe.
    If you like hot wings, you can't go wrong with this recipe. The spice of the chicken and the blue cheese sauce balance out perfectly. They are quick and easy to make and always a hit.
    This was a real crowd-pleaser! I don't cook much, but this recipe was very easy to follow and came out excellent. Really loved the blue cheese sauce, it calmed down the spice from the chicken pefectly!
    I like the sour cream with the blue cheese...gave it a lighter flavor. I did crumble it myself as it sometimes doesn't pick up the flavor through the sour cream if you use already crumbled stuff. I toasted the buns as well...There was nothing left!!! SOOO Good!
    Really good! I added canned chicken and could not taste the difference! Also had it on a whole wheat pita wrap. It was delicious.
    My husband loved this recipe. We add a little more hot sauce and cook the veggies separately unjtil they are very brown that seems to add a lot more flavor. Enjoy.
    I was a little apprehensive. I am not a fan of spicy recipes, but my husband is. We made these for lunch and we were shocked. These were delicious and incredibly easy. Not too spicy for me and a just enough kick for him! We had to subsitute some ingredients for some we already had on hand (we ddn't have Fred's, we just used our regular hot sauce; we didn't have blue cheese, we used feta crumbles and we didn't have bibb lettuce, we used shredded iceberg) and it worked out great. The cool sour cream and crunch of the red onions were a great compliment to the spicy flavor. Awesome recipe!!

    I wasn't sure how this was going to be (since even though I like the flavor, I don't like the heat that usually goes along with the spicy stuff), but this was NOT hot at all. I used Franks red hot sauce for buffalo wings, (my hubby's favorite) and I think with the butter that she added to the sauce, it must have killed some of the heat!
    This was soooooo good, we will be making it again!
    My husband and I are eat out junkies. I have really been trying to cook at home more, I tried this recipe and my husband LOVES it.
    I have made this sandwich for several different get togethers and everyone loves them. I leave off the most of the spice for the little kids and they love them as well. We have done the stuffed potato skins and the orange freezes also. Both are great with the sandwiches.

    Couldn't have been easier. I forgot to buy blue cheese, so I mixed blue cheese dressing into the sour cream. Yumo!! This was a healthy alternative to my family's favorite buffalo wings. It was a hit! Thanks Rachel Ray!

    It was very tasty however I thought there were too many scallions in the dipping sauce and my hubby thought the spicy sauce was not thick enough. Otherwise, delicious!
    This recipe was fantastic! It was very easy to make and was a perfect dinner for Friday night. I coated the inside of the buns with butter and toasted in the oven for a few minutes to give it an extra kick. Used store bought blue cheese to save even more time. Recipe was thoroughly enjoyed by my husband and I.
    This was such a great recipe! If I were really in a pinch, I'd use pre-made Blue Cheese Dressing, but even making it took me about 2 minutes tops (while the chicken cooked). I will definitely be making this again and again...
