My husband and I are huge wing fans, but we tend to stay away from them because they are so bad for you. Even the buffalo chicken sandwiches we see at restaurants are often fried. These sandwiches are a great alternative! They have turned buffalo wings from a once in a while treat to something we can have all the time. I usually buy the large pack of chicken breasts from the store and make the whole package. We have sandwiches for dinner, and then use the rest to make salads, or we chop up the chicken and throw it into a quesadilla (as rachael would say, YUMM-O!

I just made this meal for my husband and I. It was FANTASTIC! I made one change. My husband likes chicken strips so after cooking the chicken, I cut it into strips! When I rolled them in the buffalo sauce, you got more sauce on the sandwich and it increased the 'bite'!

I made this for a fast summer dinner a few evenings ago and the family just went crazy over it. I was a little worried, because a few of Rachael's recipes that I made have not been hits with the family, but this one was a winner....we will be having it again.
