    An excellent soup that's quick and easy. i added an extra half pound of sausage to make the stoup even thicker and spicier.

    This is very similar to a minestrone--you can add just about whatever you have in the frig!! I tamed it down a bit with mild Italian sausage; also used baby bellas (I've decided I really don't care for portobellas. If you're gonna make a big batch of this (which I highly recommend, don't add the greens til you're ready to serve. If you add the greens to the whole batch and then try to freeze some, the greens just don't do well. BTW, any greens will work (I used arugula in the most recent batch I made--WOW!.

    I LOVED this stoup! Super hearty and very filling! I just bought one of your cookbooks today and I am so excited to try all the recipes. Girlfriend, you said this stoup makes 4 servings? For who? An NFL football team? Haha! I'm going to have a pita tomorrow with some leftover stoup then I've gotta freeze it. It's soooooo delish. However, I think I'll have to take down the ingredients so I won't have so many leftovers next time. Thanks Rach, you rock!

    I HAVE GROWN UP ON BEAN AND LENTIL SOUPS AND THIS IS BY FAR THE BEST. IT HAS NOW BECOME THE OFFICIAL NEW YEAR LENTIL SOUP IN MY HOUSE. THANK YOU SOO MUCH FOR THIS ONE

    My husband begs me to make this soup all winter long. It's easy. I double it and put the extras in the freezer for easy dinners. I often make it using turkey sausage and it still comes out fabulously.
