Individual No-Bake Strawberry Cheesecakes

  • 12 strawberries
  • 12 ounces softened cream cheese, 1 1/2 (8-ounce) bricks
  • 2/3 cup sour cream
  • 1 cup confectioners' sugar
  • 1 teaspoon vanilla extract
  • 6 individual gram cracker crusts, available on baking aisle

Coarsely chop 6 berries and place in food processor. Add cream cheese, sour cream, confectioners' sugar, vanilla extract and process until smooth. Using a rubber spatula, fill pie tins. Garnish cheesecakes with slices of remaining berries.

    I thought the filling was great; a really easy no bake cheesecake filling. Perfect for a cheesecake-type dessert on a hot day when you don't want to turn your oven on. However, I did not put the filling into a cookie crust. I made parfaits with cookie crumbs in the bottom, and layers of the cheesecake filling and berries. Delicious!
    light, simple, and quick. it did come out a bit thin. i just added more cream cheese to thicken it up. later this week im going to experiment with variations.
    i made it just the way the recipe said too and it came out very runny, like it didnt stiffen up. did i do something wrong?
    i actually try this recipe, it is really easy and delicious to make.... I highly recommend it... I didn't find the individual pans, so I made it in a regular size one, still was a great one and got a lot of complements =
    I love this recipe. It is so easy to make. Whenever I am craving something sweet, I go pick up a few ingredients and this is there. Very easy to make and convenient.
    Original recipe was NOT good.. BUT... I ended up with a REDO and added the two tablespoons of the original (not so good batch to two packages of cream cheese and fresh strawberries. Used a little more powder sugar than the original receipe stated. Quick and easy when you get it right.
    the consistency isn't the best, but we put it in the freezer to make it work shorty before we ate it.
    This recipe tasted great but it was soupy. Did not set up well at all.
    I just made this without the fruit. I put a little lemon juice in it instead, and it's the best! I can't believe how good the filling is! It barely made it to the pie tin! Also, I used a 6oz premade graham cracker crust. It fit perfectly!
    LOVED THIS RECIPE! couldn't sleep one night, made them and they were delicous! Didn't change a thing, but here is a hint, if you let them reridgerate a little, they are better. :
    I changed up the recipe and added banana as well. This cheesecake does not set up at all-it's a gloppy mess. I have not made a no-bake cheesecake before and the flavor is definetly there but I have to eat it with a spoon. I made this for my boyfriends birthday and I was not pleased with the outcome of dessert.
    I changed it up - swapped strawberries for a pint of fresh black berries from the farmers market and added 3 Tbs bourbon. Didn't totally set like a proper cheesecake, but it tasted really good.
    I made this 5/7/11for mothers' day dinner. Like others had stated I didn't find this very flavorful. It was pretty runny so I added an instant pudding mix which helped on flavor but still did not set. I also used a strawberry yogurt in place of sour cream.I will try this again because it's very easy and versatile. However I think next time I will use the jello idea from a previous reviewer. Even so,my family thought it was yummy!
    Made this tonight for my husband and I. Ended up using more powdered sugar to make sure it set because I added 2 tablespoons of Bailey's Irish Creme. It turned out great. Had to let it set for 5 hours. But really not bad for a no bake recipe. Next time I may cook it just to try. Great recipe plan to try a lot of different things with it.

    I think this is very super tasty and its lazy, because you dont have to cook it! (: But i only used 3 fourths cup of sugar, and eliminated the strawberries altogether. Instead of the strawberries, i used a teaspoon of lemon juice, and some lemon zest. ITS SO DELICIOUS!!!!! and i used a gram cracker crust, and it worked nicely. (: i recommend this recipe for small gatherings and such.
    this is a prefect dish! I served it at my wife's birthday party and her friends came, they just enoyed this cheesecake and they asked whats my recipe and I said "I just got the recipe from Racheal Ray." they ask if I can print a copy for them.

    I didn't do individuals, I purcased a 8in crust. I let it sit for about 3 hours and it still wasn't set how I like it, it might be best to let sit for at least 6 hours or overnight. Overall, pretty good.
    I did like the taste of the mixture, but this thing would not set. I followed the recipe exactly and put it in the fridge overnight but it was still runny the next day. In the end, people had to eat it with a spoon. Not how cheesecake is supposed to be enjoyed. Disappointing.
    The filling- tasted great-but this def. needs to set in the fridge for at least an hour to thicken up. Recipe should recommend an amount of time to refridg. Otherwise more like a pudding. I think the sour cream is what makes it so soft. But very tasty.

    this is the easiest desert you could ever make. and so good. had to make it in the blender and came out a little runny, but i chilled it for about an hour and it came out so delicious. can't wait to make it again!
    I was a little skeptical about this recipe but I didn't have all the ingredients for my usual cheesecake so I thought I would give it a try. I actually made a graham cracker almond crust (just the crackers, a few almonds and melted butter in the food processor and bake for 10 min), and then used this recipe as a filling. I added some lemon zest to it, and put strawberries and blackberries on good and so easy!
    I don't cook, I don't bake, I stay out of the kitchen! But I had to make something for a party I was going to, and this was it. So simple so good!! And for those of you having a hard time finding the individual pie crusts......SAFEWAY!!
    I swapped out the strawberries for frozen raspberries (mashed them with a potato masher :) and it was delicious.Thanks Rachael.
    This is a really easy one to put together. I made mine into a full size pie. I used canned cherry pie filling for the top. Tastes Great!!
    this was very easy and quick. i added a box of rasperry jello, disolved in a cup of water, and that solved the "too soft" problem.i used rasperries cuz our plants are over abountant right now. i stirred in extra,(just to get rid a few more), then i served it in a fancy little glass with whipped cream and then grahman cracker crumbs sprinkled on company loved them.
    I modified the recipe and it turned out great! Instead of store bought shells, I made a homeade crust consisting of vanilla wafers, butter and some confectioners sugar. The homemade crust was soo much better! I placed the vanilla wafer crust and cheesecake mix in cupcake liners, bad idea!!! the cheesecake mix does not harden alot, so it was a little tough to eat it in the liners. Like the last person did, I would place in martini glasses or parfait glasses and line the bottom with the vanilla wafer crust and then put the cheesecake mix in. On top of the cheescake mix, I sprinkled the leftover vanilla wafer crust and strawberries, and of course whipped cream! So yummy, and its not heavy and filling like a typical cheescake would be :)
