Individual No-Bake Strawberry Cheesecakes

Ingredients
  • 12 strawberries
  • 12 ounces softened cream cheese, 1 1/2 (8-ounce) bricks
  • 2/3 cup sour cream
  • 1 cup confectioners' sugar
  • 1 teaspoon vanilla extract
  • 6 individual gram cracker crusts, available on baking aisle
Directions

Coarsely chop 6 berries and place in food processor. Add cream cheese, sour cream, confectioners' sugar, vanilla extract and process until smooth. Using a rubber spatula, fill pie tins. Garnish cheesecakes with slices of remaining berries.

I thought the filling was great; a really easy no bake cheesecake filling. Perfect for a cheesecake-type dessert on a hot day when you don't want to turn your oven on. Original recipe was NOT good.. BUT... I ended up with a REDO and added the two tablespoons of the original (not so good batch to two packages of cream cheese and fresh strawberries. I changed up the recipe and added banana as well. This cheesecake does not set up at all-it's a gloppy mess. I made this 5/7/11for mothers' day dinner. Like others had stated I didn't find this very flavorful. It was pretty runny so I added an instant pudding mix which helped on flavor but still did not set. I also used a strawberry yogurt in place of sour cream.I will try this again because it's very easy and versatile. However I think next time I will use the jello idea from a previous reviewer. Made this tonight for my husband and I. Ended up using more powdered sugar to make sure it set because I added 2 tablespoons of Bailey's Irish Creme. It turned out great. Had to let it set for 5 hours. But really not bad for a no bake recipe. Next time I may cook it just to try. I think this is very super tasty and its lazy, because you dont have to cook it! (: But i only used 3 fourths cup of sugar, and eliminated the strawberries altogether. Instead of the strawberries, i used a teaspoon of lemon juice, and some lemon zest. ITS SO DELICIOUS!!!!! and i used a gram cracker crust, and it worked nicely. I didn't do individuals, I purcased a 8in crust. I let it sit for about 3 hours and it still wasn't set how I like it, it might be best to let sit for at least 6 hours or overnight. Overall, pretty good. item not reviewed by moderator and published
I did like the taste of the mixture, but this thing would not set. I followed the recipe exactly and put it in the fridge overnight but it was still runny the next day. The filling- tasted great-but this def. needs to set in the fridge for at least an hour to thicken up. Recipe should recommend an amount of time to refridg. Otherwise more like a pudding. I think the sour cream is what makes it so soft. But very tasty. item not reviewed by moderator and published

I was a little skeptical about this recipe but I didn't have all the ingredients for my usual cheesecake so I thought I would give it a try. I actually made a graham cracker almond crust (just the crackers, a few almonds and melted butter in the food processor and bake for 10 min), and then used this recipe as a filling. this was very easy and quick. i added a box of rasperry jello, disolved in a cup of water, and that solved the "too soft" problem.i used rasperries cuz our plants are over abountant right now. i stirred in extra,(just to get rid a few more), then i served it in a fancy little glass with whipped cream and then grahman cracker crumbs sprinkled on top.my company loved them. item not reviewed by moderator and published
I modified the recipe and it turned out great! Instead of store bought shells, I made a homeade crust consisting of vanilla wafers, butter and some confectioners sugar. The homemade crust was soo much better! I placed the vanilla wafer crust and cheesecake mix in cupcake liners, bad idea!!! the cheesecake mix does not harden alot, so it was a little tough to eat it in the liners. Like the last person did, I would place in martini glasses or parfait glasses and line the bottom with the vanilla wafer crust and then put the cheesecake mix in. On top of the cheescake mix, I sprinkled the leftover vanilla wafer crust and strawberries, and of course whipped cream! For those that can't find the mini graham cracker crust, here is one suggestion. It would have to do this before starting the the rest of the cooking, but you could make your own graham cracker crust by crushing graham crackers, some melted butter, and some suger and press the graham crackers into custard cups or other small bowls or martini glasses. Or like one person did, put the filling in a martini glass, and I suggest you sprinkle some crushed graham crackers. If you feel that the flavor of strawberries isn't strong enough, how about using strawberry flavored cream cheese. As for the sour cream, a good substitute for sour cream is yogurt. How about using vanilla yogurt or another flavor that will compliement the strawberries or what ever fruit you decide to use. I can see where there are so many options to do with this recipe, just use your imagination. I can see where I can reduce the fat in thiis recipe. By using low fat cream cheese, yogurt (instead of sour cream), making my own crust usling low fat graham crackers, crushed to sprinkle on top and if I want a crust using my favorite graham cracker crust recipe using low fat graham crackers and light butter. item not reviewed by moderator and published
I am a novice when it comes to cooking, and this was incredibly easy and also fun because I was able to garnish the top my own way. I ate some that day and some the next day after it was in the fridge. I recommend leaving it in the fridge over night before serving. It makes it more firm and tastes better for whatever reason. Also, instead of sour cream I used half a wheel of brie, left out the strawberries and sprinkled fresh blueberries and a peach wedge on top. I put it in the fridge for a couple hours before serving. I made this recipe Twice, but I couldn't find the individual pie crust so I grabed a regular sized crust. ( bad idea) Although it still tasted great it is a very soft cheesecake so when I cut into it, it wouldn't hold up. I made these the other night. The only thing different I did was that I got an 8oz frozen tub of strawberries. My husband doesn't like shortcakes, but he enjoyed these. These cheesecakes that I made were made with raspberries instead of strawberries. Tonight, I'm going to make them with blueberries. This is a great recipe! I made mine with blueberries the first time and brought it to a picnic. Needless to say it was all gone in seconds. The second time I made a triple berry with strawberries, blueberries and raspeberries. Some other ideas may be strawberry banana or chocholate banana.
