I've made this plenty of times now with rice, egg noodles, spag. I would like to try it with polenta but like another reviewer, all I could find was the roll. Where can I buy the loose polenta?

We weren't able to find quick cooking polenta in our local Jewel, probably because it's one of the worst places to find food of any quality. We did find polenta in a tube, pretty gross looking. We had to add much more than a cup to the milk and chicken stock to get it to thicken up even after cooking it for 10 min. So we must have had the wrong kind.
My husband couldn't find any poultry or grill seasoning although I think we could have used one of McCormick's GrillMates seasonings? And I found a recipe online for poultry seasoning when typing that into google.
The sauce was soupier than we were expecting since it's supposed to be a bbq sauce. Wondering if we just did everything wrong??
Even with that said though, we thoroughly enjoyed it. Think with some clarification we might make this again.

This is another "keeper" of Rachel's recipes. Chicken cutlets work beautifully with this (I have done it with parts, browning and cooking takes a bit longer. I recommend using everything she did for the sauce, absolutely delish. It is a real winner. I have served it with both rice and pasta instead of the polenta, both work well, especially with the sauce. Served with fresh string beans and a loaf of Italian bread as sides and it was a hit, even with young children. Yes, a thirty minute meal using cutlets from prep work to when it hits the table; cleanup, is a usual Rachel recipe....a bit more. However, don't miss this one.

The sauce is amazing. Turned ordinary roasted chicken into something special and delicious. Recipe still works without browning chicken in pan.

This BBQ sauce is awesome! I made Alton's polenta that called for parmesan and pan fried it. I wish I had fresh rosemary on hand, that would have made a big difference. If you're using dried rosemary don't be shy with it. I ground it up in my spice grinder.

Not quite a 30 minute meal, but worth the effort(more like a 50 minute meal-lol. This is finger lickin good. Puts bottled barbecue sauce to shame. Flavors married very well with the cheesy polenta. Will be making again soon. Worthy of company.

Delicious dish. Used the pancetta. Use 4 small thighs and 4 drumsticks and had plenty of sauce...this would be a great addition for a family style Italian meal. Should be easy to make for a group.

This dish I've made now several times. Depending on my guest I may omit the bacon but either way this simple dish comes out tasting FANtastic!!!
I highly recommend it.

I served this for Christmas Eve and I thought it was not going to be tender. The chicken was sooo tasty and tender and my whole family loved it! It's a way to serve a barbecue dish in a different way. It just takes time to prepare and brown the chicken so plan ahead. I had to make about 3 dozens legs/thighs.. that's why it took so long. I will make this all the time now!

made it today after reading all the positive reviews. came out good. never used polenta so wasnt sure but i have to say it compliments the chicken well.
