    The only thing I did different was reduce the meat--I only had one pound of burger. But I love lots of veggies and seasoning so I didn't cut those back and it ended up being the moistest, most flavorful meatloaf I've ever made. I liked the mini meatloaves because it was easier to serve.

    I only made the mac & cheese. This mac & cheese is great. I did not have asiago cheese so I used 2.5 cups of mild cheddar and 1/2 of fresh Parmigiano-Reggiano. I added tiny steamed broccoli florets and a dash of nutmeg and my family loves it. This is my new go to recipe for mac & Cheese because the cheese sauce tastes great and is versatile enough to mix it up a little.

    I only made the meat loaves and not the mac and cheese. I think the recipe had a bit too much onion and garlic. I felt like that was all we could taste. Mine also seemed a bit dry, which could have been my fault. They were okay but I will stick with my regular sized meat loaf recipe.

    I've made this recipe several times and it is always so tasty and delicious! When I bake the mini loaves I put them on a wire rack (like one you put cookies on to cool and put the wire rack on the baking sheet. All the fat drips away while they cook and they are a lot less greasy.

    I only made the mac & cheese, and it was great! I decided not to top it with bread crumbs or bake. Next time, instead of 2 cups of sharp cheddar I might do one cup of sharp and one cup of white cheddar...the yellowness of the mac and cheese reminded me a little of box mac and cheese (ick!, so partially substituing a white cheese might make it look a little more like Mom's! I served it along side Ina Garten's Parmesan Chicken Sticks and asparagus, yum! I'm going to make the mini-meatloaves tonight with the leftover mac and cheese---it makes a lot!

    I made the mini meat loaves like the recipe and while they came out nicely, they could use a little more flavor. Next time I will shred the onions and add some Italian seasoning. The Mac and Three Cheeses was delicious! I used a mix of medium and extra sharp cheddar, added some other spices (white pepper, onion powder, garlic salt as well as not doing the bread crumb topping. I started cooking & prep (& some cleaning up too at about 6 PM after a loooong day at work and dinner was ready in about 45 minutes. That's much better than waiting for an hour and a half just for a traditional meatloaf.

    The food was great, we made the meatloaf and the mac n cheese, the topping for the mac n cheese was awesome, I have never had anything like it before, we will make this again in the near future, what a hit.

    The meat loaves had great flavor and the mac and cheese was delicious and really easy to make. It does not need the olive oil/herb topping. I pureed the onion, garlic and pepper in the food processor before adding to the meat for a smoother texture and added another egg to help it solidify a little more. Also added oregano, basil and thyme to the meat mixture.

    Very flavorful had to have seconds on the Mac & Cheese. I have prepared many different kinds of Mac & Cheese and this is by far the best.
