I enjoyed this dish. There is a little residual heat, so if you have someone who does not enjoy hot food you might want to reduce the amount of adobo sauce. I didn't see the orange zest listed in the directions, so I put it in with the juice. If you accidentally omit that ingredient it might not be as flavorful. The cilantro adds a nice flavor too. Fyi -- 2 cups of carrots turned out to be a little less than 1 lb.

very bland...missing something. not worth the effort. I added salt, pepper, pepper flakes...nothing seemed to help. Pass on this one.

I have no idea why the last review was so low??? This is an amazing recipe. We were invited for a BBQ serving grilled tacos and I needed to bring a salad. I made this and OMG it's so awesome tasting! Try this, you won't be disappointed.

I've never cooked with adobo sauce. This was way too spicy for my taste.I remade the recipe w/out the adobo sauce and it was great! Crunchy, fresh, citrus and it kept well.

I can cook like nobody's business. I've never had jicama before, and this recipe looked good on the show...What a way to ruin a perfectly good jicama! I followed the directions explicitly and this turned out to be one of the most inedible dishes I have ever seen, smelled, and unfortunately...tasted. My 7 year old daughter was all excited to try jicama for the first time and now I think she'll never even LOOK at one again. The chipotle is WAY off for this dish. If you're going to add the chipotle, skip the orange and orange marmalade - they'll be way overpowered and it's a waste of $4 for the marmalade (and a tragic way for delicious marmalade to be treated. The adobo is just waaaaaay too spicy - you even lose the flavor of the carrots and the jicama and cilantro...so it's like eating mysteriously crunchy/soggy adobo with oil. The dressing recipe portions also generate a tremendous amount of waste.

Honestly, I really question this woman's (or her producers cooking skills. This is the second recipe of hers (out of two that I've tried so far that has been a complete and epic FAIL. Presentation has been a nightmare, which is the least of my worries because taste has made me want to vomit both times...does anybody actually taste these recipes before they're put in front of the public?? I always have to "rescue" these recipes with my own know-how. This one, however, was beyond repair.

Geez, the people that write these recipes don't actually watch the shows. I wish the hosts were required to review before they are published!

Cut the jicama and carrot into matchsticks!

I have been looking for a recipe to go with Ina's Tequilla Chicken and thought this would pair well. I also made Melissa's Perfect Black Beans and the three together made a wonderful meal.
After reading other's suggestions about keeping the dressing on the side I went that route and it worked great, leaving the leftovers fresh and crisp for tomorrow's lunch!
Love your show Rachel and have your cookbooks to refer to when I'm in the kitchen and not on the computer looking for something new to whip up in 30 minutes!

I thought this salad was great! Kids love carrots and adding in the jicama was a great way to get them to try something new! I did not add the adobo sauce because I have small kids who do not like spicy foods. And without the chilis the slaw was fabulous! Will definately make again!

This was the grossest thing I have ever tried. I love jicama, carrots, and orange, but orange and chipotle adobo sauce.... do NOT go together. Initially I made half the slaw sauce because it seemed like it was going to be too much (half ended up being just right. I wasnt sure about adding the adobo so I added maybe just half a teaspoon... just by adding this half teaspoon, the slaw was so gross, I had to toss it out. I later did make up a similar slaw, I used cabbage, carrots, and jicama, I took a little coleslaw mix and added marmalade and orange juice. This turned out to be a very refreshing twist on a coleslaw.
