    We call these "grown up" cookies when the kids are around. Delicious and easy.

    These are really yummy! The walnuts are a nice to balance the rich flavors of coffee and chocolate.

    Due to certain restraints: 1]I had to double the receipe 'enough for all', refrigerated parchment lined full and half sheet cookie pans to cool/ no wire racks, no liquor, chocolate cookie mix, large eggs, walnuts, whole roasted coffee beans, and (for give me NO Bittersweet Ghiradelli.
    Allowances need to be made. The crew of the barge thought they were good cookies anyway.
    All and all if we had 1/2 the correct ingredients, the cookies would have been better. Oh, if you try this space them further apart then 2".

    Flavor was good, but.....
    mine turned out flat. I followed the recipe exactly, but omitted the coffee beans as a few others suggested. I would make these again if I can figure out what I need to do for more volume.

    The coffee grains are horrible.. maybe use dissolved instant coffee or just plain coffee.. but not the grains.. EW. I love coffee and I hate this - the texture is just too much. Kahlua taste is also eclipsed by the other flavors. Would not make again.

    These cookies are SO amazing! My mom whips up a few batches and sends them with my sister and I back to college, and I only give them out to my closest friends!

    If you want to save some (or keep yourself from eating all of them at one sitting, I put them in the freezer, and they last a long time! I either reheat them, or even eat them cold...they're good no matter what!

    I had this recipe for a while and maded them today.WOW I used the box ghirarelli chip cookie mix.I didnt have any bittersweet choc .So I just used semi sweet chips from ghirardelli.It called for Instant espresso didnt have that ,but I had Hill bros instant cappuccino English Toffee I used 5 tbs in the cookie mix and it was very good.For the coffee beans,I uses kona coffee.I couldnt stop eating them!!!!YOU have to make these even if you are not a coffee drinker.

    I made these for Christmas using Ghirardelli chocolate chip cookie mix, and Ghirardelli bittersweet choc chips. I bought choc flavored whole coffee beans and ground them myself. I also used regular instant coffee instead of instant espresso. I was a little worried about having coffee 'grounds' in my cookies, but fear not. These are some of the best cookies I have ever made, including many from scratch. Everyone who loves chocolate and/or coffee loves them. And you had better love chocolate! They are decadent. Just the thing when you are really busy and can't spend a lot of time with from-scratch recipes.
    I did chill the dough before baking them, as I had so many types of cookies going at the same time, and I like the results that gave me. I used bittersweet chips since I didn't have time to chop chocolate into chunks, and I highly recommend Ghirardelli cookie mix. Try these - you will really love them.
