    I made these for a "dessert party" potluck I had last week, and it was nice to have the shortcut of using the store-bought cookie mix. I substituted white chocolate chips for the bittersweet, which I think added some sweetness to the strong coffee flavor. They're also a nice coffee-substitute for us caffeine-addicts!

    When my husband closed his eyes when he was eating them...making sounds like...mmmmmm....mmmmm.. I knew they were good. I got the same reaction when I brought them to a soccer barbecue.

    When I saw Rachael Ray make these cookies on TV, I had to try them, even though I'm not supposed to eat these as I'm diabetic. So, today, I got the extra ingredients I needed and made these yummy morsels. Yes, they are a delicious cookie for the adult taste.I had to try one. The rest will be hubby's treat to take to his office. I don't think I would want to offer these expensive, caffeine rich cookies to children. But for an adult treat, they are very nice.     The most perfect Chocolate Chip Cookie ever. Not too sweet, and the chocolate coffee combo is a perfect balance. Definately not a "before bedtime" snack.
