I thought that this recipe was really good. It tasted great and the only thing that I added was some corn in the guacamole dip. Great recipe!

I made this recipe this evening and it is amazing. I was short about a 1/4 cup of rice so i used slightly less chicken stock to balance things out. I followed the recipe closely except I left out the raisins simply because i'm not a fan of raisins. I also did not make the sour cream and avocado sauce, but will give it a shot next time. At first i thought about leaving out the Spanish olives and simply making pico de gallo, but ended up including the Sapnish olives and i am glad that i did because it was delicious. This recipe is quick, easy, healthy and light yet filling. I'll definitely be making this again many times in the future.

The raisins & olives (when found, I chopped them up very small freaked out my family, but all agreed this was fantastic. Will definently be making again.

Very good. I added onions and garlic before the chicken. I used brown rice, so precooked the rice for about 15 minutes before adding to the chicken. I also followed the advice of the other reviewers and kept it covered. It was nice to find a new flavor for a chicken meal.

I love this recipe!! I use a can of black beans instead of the raisins, and I always double the salsa. I've made this for numerous people and they always request the recipe. It also reheats really well.

Not only was it easy, it was also super tasty and delicious!!!! I'm Mexican and didn't expect this much flavor. Everyone loved it. I definitely will make it again. -used craisins instead of raisins and covered while letting it simmer.

Easy and quick out of pantry dinner...The recipe doesn't say but PUT A COVER ON IT! I didn't have sazon therefore I used 1 cup of medium salsa in place of the tomato sauce and I bumped up the poultry seasoning (Goya Adobo to 1 tablespoon. I doubled the oil because I used more chicken then the recipe called for. I used chicken thighs for the most flavor. I used basmati rice I had on hand. Rice to chicken stock ratio is correct for this. The texture of the rice was perfect--don't cook longer or it will burn or have mushy rice. Very flavorful! I did not make the toppings and found the dish fine with out them, however I will next time for more visual appeal. I didn't like the thought of the raisins so I left them out.

I gave it a four only because the rice did burn at the bottom of the pot and was too watery on top. Maybe I just don't know how to cook rice. But I wish I read the reviews about adding less water... but then, how would I keep it from burning at the bottom? The flavors were great even though I substituted garlic powder, onion powder, basil, Italian seazoning and cumin for the sazon. Very good flavors, my kids loved it.

Made this last night, it was pretty good.
I tried 2 Hispanic supermarkets and did not find Goya Sazon it appears to be an East Coast brand. I substituted 1/4 tsp each achiote, coriander, cumin, garlic powder, oregano, paprika, pepper, and salt. This worked fine.
I had to add more liquid. As others have said, it would seem better to cook the rice the regular way, 2 parts liquid to 1 part water, boil, turn down to low, cover, and cook 20 minutes.
The "Avocado and Garlic Sour Cream" is basically guacamole with sour cream mixed into it. Next time, I'll just serve the guacamole and sour cream as 2 separate toppings, this gives the person eating the dish the choice of whether to combine them or not. Also it was a huge amount of dip, I'd probably cut the quantity at least in half, that goes for the salsa too.
Again, a pretty good dish. I paired it with refried beans and tortilla chips. One could also roll this up into a burrito.

It wasn't too bad. It seems like it was missing something though. But overall made for a great dinner! :
