I was so excited to cook this meal, but ended up a bit disappointed. At first, I could not find the sazon, not even at walmart. Tried 4 stores. Second, this meal did not take 30 minutes, not even counting the prep time. We ran into some problems, the rice was not cooking, we had to add more chicken stock, and I recommend covering it. Second, there was way to much garnish. I recommend not putting so much lemon in it so you can use it as a guacamole dip later on. Easily enough food to feed 5. Chicken needed more seasoning. My roommate loved the dish, but my boyfriend and I, perhaps because we had a hard time making it, weren't so impressed.

For those of you who couldn't find Sayzon, Wal Mart carries it. It will probably be in the area that carries International or hispanic specialties.

I always follow recipes completely the first time and this was very good. The salsa was so good that I could eat it alone and anticipate using it with many other Mexican style dishes that I like to prepare. The only change might be to put in a little jalapeno pepper since I like things a bit hot. I used a dutch oven to make this. Possibly because of the tightly fitting heavy lid, I found the chicken and rice to be a bit over cooked. There was no need to add liquid. I may need to adjust my gas burner to way below low for the right degree of doneness. I really like the review suggestion of substituting mexicorn for raisins. I will probably try that next time, although I might try it as an addition rather than a substitution.

Very good and simple to put together. Even the kids liked it, which is always a plus. You should try it. I don't think you will be disappointed.

This was a great dish. I halfed the recipe for my girlfriend and I and still had a small amount of left overs.
After going to 6 stores I couldn't track down the Sazon. I think my issue was not locating an international market or corner mexican food store before I went shopping as I ended up bouncing around the larger grocery stores in my area with no luck.
At any rate I subbed taco seasoning, cumin, and chilli powder for the Sazon. The dish was still very tasty and total success.

Follow the directions exactly, including making the salsa! So good. My husband thought this was one of Rachael's best recipes so far. The finished recipe had A LOT of the condiments left over, though. It was enough for at least one big serving, so we made quesadillas with all the left over chicken/rice and topped it with the condiments. Leftovers were never so good!

I have tried several of Rachael's recipes and have been a big fan for the most part, but I was not impressed with this one. It was fast and easy, which was great, but lacked flavor. My husband is a big chicken and rice person, but he wasn't a big fan of this one. Sorry Rach, maybe next time.

Made this recipe twice this week for family and friends...it was a hit both times! I added a little chili powder and red pepper to the rice and chicken mixture since we like spicy foods. The salsa was incredible! I will make this again just to serve with tostado chips. Great recipe, Rachel! Thanks so much!
