    A real keeper in our house. My husband could not get enough of it. Winner for potluck, drop in company and just plain anytime.

    This recipe is awesome, but I think next time I will add some sort of hot peppers (not quite sure what type yet too give it am extra kick.

    It was especially good luke warm the next day for lunch.

    This dish was a real crowd pleaser! You may want to add more chicken if anyone won't be eating the toppings with it. Store bought salsa or guac don't cut it! Make the toppings!! SO GOOD!

    I omitted the poultry seasoning. I have made this dish 3 times already. I made it for my in-laws from Mexico and they love it especially with the Olive and Pepper salsa.

    big big big hit in my house! my boyfriend loved it, my brother loved it, and even my 18 month old picky eater liked it (especially the avocado sour cream. thanks Rachael, I will be using this one a lot!

    This recipe was the best I've tried in a while. It has lots of flavor and texture, and was easy to prepare. The only thing I adjusted was the amount of chicken stock. I noticed in the last few minutes of cooking that the rice was still a bit too hard, and most of the stock was absorbed. I added an extra cup of stock for the last few minutes of cooking which did the trick.

    I have made a lot of Rachael's recipes. Most are very good and enter our "recipe book" forever. This one stood out however. The flavors are amazing. I couldn't get Sazon in my area, so I substituted a Mexican Seasoning Blend and some Annato Seed. All in one pot too, easy. I use my Le Creuset. I don't make the avocado topping because my husband wouldn't like it, but the olive topping is phenomenal. I could eat it on a hotdog. That sounds good actually...

    This dish was incredible! So tasty!! I have yet to be able to make a "30 Minute Meal" in only 30 minutes (haha! but it was still pretty simple and quick. I will be sure to make this again!!
