    This was very simple and my husband and I both loved it. Very filling too. I didnt add the raisins and opted for store-bought fresh salsa because my husband dislikes olives and red peppers. The Guac and sour cream topping was delish! Thanks, Rachael.

    Surprisingly delicious! Only change I made was to substitute my favorite salsa from my favorite restaurant. It served to give it my touch, and it made for less prep work for me.

    Sorry Rach, I have all your books & this is the first recipie that I don't care for. I can't imagine just one skimpy pound of chicken, even when cut into small bites, absolutely buried in that sea of 3-4 cups cooked rice! I couldn't find Goya either - perhaps she should have also said to go look in the soup isle for this one too, so I used McCormick Mexican Seasoning. Followed the recipie exactly. Thought the flavor was good & didn't over salt. I thought the salsa needed way more than just a few drops of hot sauce. The avocado cream needed less sour cream & more avocado so I used two avocados, 1 1/4 cup sour cream, 1/2 tsp. garlic powder, 1/2 tsp onion powder, 1/2 tsp salt & the full clove of garlic to give it some flavor other than sour cream. My boyfriend came up with the best idea -- this over-ricey mess would be fabulous as a burrito filling using both the salsa and avocado creme - & that's what I'm going to do with the leftovers after I pick out the remaining chicken & save about a cup of rice. 99.9/10% of her stuff is OUTSTANDING but this misses. Love 'ya anyway Rach!

    I have made this several times and it is always a hit. I would recommend making the toppings ahead (it's hard to do the 30 minute thing if you count the toppings in the 30 minutes. The avocado cream does not discolor quickly, so you can store it with plastic wrap over the top for hours. The olive salsa lasts for days. But DO make the toppings, they "make" the dish. It is a real crowd-pleaser!

    I think I was asked 3 times in one week to make this dish. The Latin Chicken Recipe is definately tasty.... the whole family loved it. After making this meal, my friend's daughter, who is 6 years old, asked me to move in with her so i can cook for her everyday. Talk about a compliment. Besides its flavorful taste this dish is very easy to make and helps keep the pots clean. its a one pot wonder.
