My family loves this recipe. However, since I am not eating wheat products, I used corn starch instead of flour on the chicken. Turns out much crispier then the flour. Try it, your family will love it this way too.

Wonderful! To cut down on the sweetness of the lemon curd, I added about a table spoon of lemon juice, it it did help. My fiancee had three helpings, now that tells you something! Well done Rachel!

Rachel Ray where have you been all my life. I tried this dish. My 12 year old son helped me we had a blast in the kitchen working together to make this. It was easy and great with the rice and green beans dishes. It sure helped take away those winter blahs of eating the same thing. If you like lemon go ahead and try it. You won't be disappointed.

I literally looked up the recipe and had it on the table within 20 minutes of printing it out. The rice was the only hold up. I was out of lemon curd, so I used lemon pie filling instead and I also added the juice of the lemon that I zested to make it more tart. I also used dried chives and it was a HUGE hit! This will make the rotation each month. Thanks Rachel!

I thought storebought lemon curd would be too sweet, so I made my own...not quite a 30-minute meal anymore, but still worth it. Everyone loves this delicious dinner.
