    I am married to an Indian man so I cook Indian food almost every night for dinner. I have never heard of this combination before so I decided to try it out. I only cooked the Curry portion of the meal and served it with regular basmati rice. My husband and I both liked it, however felt that there was not enough of the Indian flavor in the curry. Overall it was good, but I will personally make some changes to it to increase the tastiness.

    I loved how this smelled as it cooked! I thought the spice combo was nice. My husband said it tasted a lot like the food he ate during a stint in Jerusalem. Not Indian, but whatever--it was still a nice side dish. Makes a LOT, though, so be prepared! Went well with the Greek burgers from this episode.

    I made the curry portion of this recipe only and served it over brown rice. It was fabulous and I have already made it 3 times. Thanks Rachael.

    I made the entire meal from this episode of 30 minute meals. I watched as she made it, and wanted to try it. This side dish rated a 4.5 average from my family of 3. My DH always wants things extra spicy. I used 2 rounded tablespoons of hot curry paste, and I think I could have also added some red pepper flake to this to make it as spicy as he likes it. My DD however is a big rice lover, and enjoyed the rice and veggies as is. I thought they were great and went very well with the greek burgers from this same episode. Thanks Rachael for a great meal that took my turkey burgers to a whole new level!

    Really liked the rice, not so hot on the rest of the dish. Try making with naan bread next time

    I made this for my family and friends and even ones that said they hated eggplant loved this. No leftovers. :( I wanted more!!! :

    I love the taste and how everything goest together very well. It was hard to find some if the spices and they are a bit expensive, however the rest of the dish is very inexpensive and the spices will last a very long time. I plan to use the rice recipe with other dishes, makes a great side when you want something different.

    One of the best recipes ever for the curry and the rice. I also added the juice of 1 lemon to the rice broth and it came out delish!
    Rachel thanks for another great dish.

    I fixed this Yesterday, and oh my goodness. I did tweek it a little by adding shrimp, and it was wonderful. I did not make the rice though. Will def. make again.
