    I made this as it looked great on the show. The rice was fantastic but the vegetable mix was strange. It had some different flavors and did not seem to have enough curry. I guess everyone has different tastes but I really did not like itl

    This is an excellent way to eat your veggies. I used more spice in the rice and hot curry paste rather than mild. Great leftovers too.

    This recipe would be great if it didn't call for so much curry paste!!! I couldn't taste the flavors in the dish because it was so hot. If you reduce 2 T. to 1 T. I think it would taste much better. Other than that, I think it is a wonderful, healthy recipe.

    Rachel admitted she was making up these recipes for the vegetable curry and basmati rice. I think she should have referred to a good Indian recipe book. Generally, I haven't been disappointed with her recipes, but the recipe for the basmati rice completely destroyed what the rice should smell and taste like. The recipe for the rice included nearly every Indian spice available. Vegetable curry was bland -- that's where all the spices should have gone.

    I thought this was soo good. I also used whole grain basamati. Next time I make this, I will add a bit of salt to the rice spice mixture and not so much curry paste to the veggies-as the curry paste I used was extremely hot! My house smelled soooo good while cooking this!!!

    This recipe was so delicious and easy to prepare. I used whole wheat Basmati Rice instead of White which took 50 minutes to cook, otherwise this portion of the meal would have only taken about 20 minutes.

    I substituted the chicken broth for vegetable broth to make this vegetarian friendly, and all I can say is yum! This will definately be made often at my house!

    I love indian food and this really hit the spot. I usually dont care for eggplant but this was really tasty. The rice alone didn't do much for me but by adding the vegetable curry, WOW!!! I gave some to my friend who was raised in India and she couldn't get enough. Thanks Rachel, this one is a keeper.
