    Loved it!! I did leave out the lemon segments,mint and the water just using 4 cups of chicken stock, and I only used 1/2 the lemon juice. My son (20 who has not enjoyed risotto in the past asked me to make it again! ( he is usually not vocal about what I make, only hoping for few dishes to clean up

    I see that this recipe got mostly 4 and 5 star reviews. However, the one time I made it, it came out totally gummy and like glue. This is probably due to the fact that I followed the recipe and added the extra two cups of water listed in the ingredients. So, that made a total of 6 cups of liquid, not counting the wine, to one cup of rice. And, it took over an hour to get all the liquid absorbed! That should have been a major clue that something was wrong. In checking other risotto recipes online, I could not find a single recipe that called for that much liquid in proportion to the rice. I do see in the directions to the recipe, that extra 2 cups of water is never mentioned. So I think that is an error on the ingredient list. I am sure that using just the one quart of chicken broth would make this a perfect lemon risotto and I will attempt it again. I would be curious to know if all of you who gave this 4 and 5 star reviews used that 2 cups of water or not.

    Loved it! Added 1 can of artichoke hearts and skipped the sugar! Served with Anne Burrell's braised stuffed calamari! Wonderful!

    This was absolutely fantastic, didn't change a thing. Served it along side grilled portabellos glazed with a lemon/balsamic vinaigrette and balsamic glazed vegetables.

    My husband and I loved this recipe. I didn't use the lemon sections/sugar because I didn't have any, but used extra lemon juice. I also used parmesan/asiago/romano cheese instead, but it was amazing. I made it with the orange balsamic chicken. I would definitely make it again. It was easy to follow the directions.

    I love lemons and adored this recipe. I made it exactly to the recipe but omited the onion because I'm allergic to them. I love serving it with fish; such a lucious creamy contrast to a firm tilapia. This is for lemon lovers only though.

    My first time making risotto! Was very good! Doubled it-was not sure 1 cup of rice was going to be enough for 5 people-would have been plenty-took a long time to make -but was worth it! Love the lemon flavor-served with Giada's Broiled Tilapia with mustard chive sauce-great pairing!!

    So amazing- goes perfectly with the orange chicken from the same ep! This was our first risotto and it was so easy and delicious!
