    Follow this recipe and you will not be sorry! I served this with seared scallops....YUM! Even better the next day. Really light and awesome for summer.

    My husband and I made this for supper last week. It was my first attempt at risotto, and I left out the white wine because I didn't have any, but it was absolutely amazing. We added a little bit of cayanne to add a little bit of heat........but I will DEFINATELY make it again! Thanks Rachael

    This is a GREAT risotto recipe, very easy, and super tasty! This is the first risotto recipe I've made from scratch and it turned out great, I will absolutely be making this again!

    Very tasty-- I have come back to this recipe a couple of times, but made some changes. I felt that the original recipe uses too much lemon juice (it was sour the first time I made it so now I use the juice of 1/2 lemon and omit the wedges. I also omit the mint just because I don't like mint in cooking. The original recipe also uses way too much liquid-- you really only need 4 cups total, so I usually do about 2 1/2 cups broth and 1 1/2 cups water. The pecorino is great, but parmesan works nicely too!

    I love this risotto rice. I love lemon and and felt it was to much so I skip the supreme a lemon step and it is just as wonderful. Also, to supreme a lemon is not worth the work. I also make it with the orange-balsamic glaze chicken. GREAT!

    This was my first time making risotto and it was perfect, the recipe was easy to follow. It was perfect with the orange-balsamic glaze chicken from the same episode. The chicken was nice and sweet and the risotto very lemony, they are great together.

    I take exception to the fact this is marked as an "easy" dish. Numerous ingredients which need to be chopped and combined in different stages. Also, this requires a weather eye constantly. I also think there is far too much lemon... or maybe I purchased a really juicy lemon. The consistency was right on point though. Not something that I would try again. The accompanying orange balsamic glazed chicken was a real keeper.

    I am a risotto lover - I make it often. This is, hands down, the best recipe! I did pull back the juice of one lemon to a half. Served with seared scallops! Delicious!!!!!

    This was a really great tasting risotto. The lemon adds such a fresh flavor. Using the recipe was the first time I've ever tried to make risotto and it turned out great. One thing to note that that you have to watch the rice and pretty much almost boil between adding the ladles of chicken broth. During this step of the recipe, don't get hung up on the recipe; just keep adding broth once it looks like it needs it and stir! Enjoy.

    This is the MOST INCREDIBLE risotto ever! I usually can't stand rice but this is now my favorite dish! We made it with the balsamic orange chicken and they were perfect together! And it's so easy to make...my 12 daughter made the risotto while I made the chicken! Absolutely unreal!
