    Was hesitant to try at first because its different than any other kind of risotto that I had ever made, but it was fabulous and creamy. The combination of flavors was incredible. I used pecorino Romano cheese and only half a squeezed lemon with the lemon sections and zest. As others noted, its a great side dish for the Orange-Basalmic Glazed Chicken.

    Easy and delish. I had some trouble finding the rice at the grocery store, but the manager pointed me in the right direction (in the produce dept.. Go figure? any way you shouldn't have any problems making this. Thanks Rachel!

    I was hesitant to try this but I'm glad I did. I served it with the orange balsamic chicken and it was delicious! The risotto had a nice balance of flavors. It was not too lemon-y like I thought it would be! However it did take a little longer than 30 minutes for the rice to cook to al-dente but it was well worth it! I will definitely be keeping this recipe to make again!

    I made this along with the Chicken for a dinner party of 10 and it was to die for! I will definitely be putting this into my regular rotation. The only thing I might change the next time is cutting back on the lemon. It slightly overpowered the other flavors in the risotto.

    Wow! I love the way the lemon and mint taste in this dish. I was always afraid to make Risotto but that was pretty easy. I like the use of the bits of lemon as opposed to only the juice. Very nice flavor. I'm not afraid of Risotto anymore and I finally got to use my mint leaves.

    Made this the other night along with the rosemary-orange chicken thighs from the episode. It was my first attempt at risotto, and I was pleasantly suprised by how easy it was and at how little butter went into it-much healthier than I had thought! My boyfriend and I both loved the texture and creaminess of it, but we agreed that there was just too lemony-and that is coming from a lemon freak-but it just overpowered the risotto. I'd definitely make it again and cut back on the lemon a bit though.

    I made this tonight and my husband and I both really liked it. I've never made risotto, and was pleasantly surprised with my success! My kids did not really like it- I think the lemon and mint was too strong for them.

    I really enjoyed all of these flavors together. This dish would be even better if you make it in the summer, with fresh mint and basil from the garden.

    Love the lemon flavor, and love the risotto. Simple to make, and I am now the risotto queen thanks to Rachel Ray! I made it with the citrus orange chicken, topped with the arugula, I got a complete meal, side, meat and greens in one plate. Love it!

    The cheese completely ruined this dish. We could not get past the strong flavor of the cheese. We love lemon in our house so I may try this again without the cheese.
