    There was a lot of flavor, but the cauliflower was to runny. I even drain off some of the stock. I'll try it again. (also cauliflower was a little salty

    I was dissappointed that my meal didn't turn out as nice as it did when Rachel Ray made it.
    The cauliflower turned out to be like soup. I was should have drained out the liquid, but I like to follow recipes exactly the first time I make them.
    The chard was ok I never had chard before so the flavor was good, I thought is should have been cut into bit size pieces.
    The london broil would have turned out better had I known how to use my broiler, which I've never used before.
    And the gravy I don't know what the heck I did wrong there, but it wasn't thick at all.

    Maybe it was a chef (me issue and not the recipe at all. I've made other recipes of Rachel Ray's and loved them, so I'll just trying.

    Easy peasy, just like the TV show. An explosion of flavors. The chard really cooks down, so don't be shy about using a couple of bunches. The cauliflower tasted awesome. The more cheese the better.

    I didn't do the entire recipe because I am staying away from gravy and I don't particularly care for red chard BUT...the smashed cauliflower was awesome! I substituted vegetable stock for chicken stock and added 2 cloves of sliced garlic and about a tablespoon of crushed dried rosemary while the cauliflower was cooking so the flavors would infuse. Turned out GREAT!

    I'd made a version of mashed cauliflower before that made me swear I'd never make it again...until I found this recipe. The combination of the chicken stock, butter and cheeses makes this cauliflower very tasty. Even my husband had seconds! A word of advice: After the last 2 minutes of simmering on med-high, you'll have to drain the cauliflower in a strainer (there's way too much liquid to then add the butter, then return to same pan for extra moisture to be dried up.

    The red chard is also delicious compared to boring old spinach!

    The London Broil recipe was quick and easy. The smashed cauliflower was delicious. I didn't try the red chard because I didn't have any on hand.

    I never would have thought to substitute cauliflower for mashed potatos and was even a little apprehencive at first. I am a meat and potatos girl that is on a diet, so I decided to give it a try. After all, Rachel has yet to let me down with her recipes. If she says it'll work or is good, it IS! I did not fix the cauliflower with all the ingredients she used. Instead I made mine almost like I make my mashed potatos. I used garlic powder, non-fat plain yogurt, chives, salt and pepper, and lowfat butter substitute. It was GREAT!! The yogurt instead of half and half or milk gives the potatos an extra zing. They come out about like chucky style mashed potatos and she was right, you will NOT miss your potatos or the calories!

    We are not watching our carb intake, but I tried this recipe nonetheless b/c I had a london broil in the freezer that I've been waiting to use. The cauliflower was absolutely amazing. I followed other's leads and used only about a cup or so of chicken broth and it was the perfect consistency. I forgot all about the salt, pepper, and nutmeg, but thought they tasted perfect the way they were. I could have done with less of the A-1 flavor in the gravy, and will reduce the amount the next time I make it. I think sauteed mushrooms would have been really good in the gravy, too...maybe next time! I opted not to make the chard and ham, and just served another green veggie in its place. Came together easily for a work night, and hubby and toddler both loved it.
