    I made this for my family tonight and in a word- YUMMO! I used a little more bacon since my husband loves it and only half of a very large onion. I also removed some of the grease from the bacon before cooking the onion.

    The Mac and cheese was wonderful. This was a date night with my wife. I made the Mac and cheese while she made the chicken. What a great time we had cooking together plus it was so good. We always look forward to cooking a great meal.

    This was excellent, my family was raving. The only change I made was I used turkey bacon. I also probably cooked the onions for longer then 10 mins. I used 2 normal sized onions from the store and the dish came out great. I'm eating some leftovers right now, it's better when it's fresh but the leftovers are okay.

    i really enjoyed this dish. as a novice cooker, i enjoy rachel's recipes because they are easy, but don't taste basic. this dish had a lot of flavor, and my boyfriend had two helpings, which means it was a hit! i went with the recommendations of using one medium/large onion and this seemed to be a good amount.

    My husband & I really loved this recipe. I did substitute turkey bacon...my husband did not even notice and went with half greyere and half fontina, I am tight with my greyere. We
    Served the mac & cheese up with a nice spring mix salad. Loved the short prep time and the great depth of flavor, loved the way it tasted of fondue..... Again, Rachel....you are amazing!

    My family loved this recipe, my 8 year old had 4 servings! I used one large onion based on the reviews and made sure to simmer the milk and broth mixture until it was thick.

    This tasted great to me, I just wanted the cheese sauce to be thicker. I would reduce the liquid by half and see how it turned out. I do notice that a lot of Rachael's mac'n cheese recipes call for half chicken stock and half milk, and I usually think the sauce is too runny. Great flavor combo, though!

    I found this dish to be disappointing. I used a smoked white cheddar instead of gruyere and only used one onion, like the other reviews had suggested. I also used a whole pound of bacon instead of the half pound on the recipe. It just wasn't satisfying enough for me to consider it a main dish. Mabye if I had used gruyere, it would have been better, but I don't think I will make it again. I just thought.. cheese, onions, mustard, bacon. These are all things I love. But I didn't love them in this dish.
