    I just made this salad last night and it is great! I served the cheese on the side so it wouldn't get soggy for leftovers. I love the flavors of the cilantro with the chipotle salsa! I am looking forward to making this for summer BBQ's.

    I tried this recipe, it was alright when you first fix it, but after it sits its terrible. I ended up adding taco seasoning, taco, sauce, alittle miricle whip, cerranno peppers. It was GREAT!! But this recipe fixes ALOT!! and I'm used to 12-18 people at a time and way too much.

    I made this pasta salad for some friends one night and they have requested it for everything we do since then. I then made it for a family get-together and everybody loved it. It is such a good recipe! It does make a LOT more than 4 servings though. Even people that don't like pasta salad love this one since it doesn't have mayo and isn't so heavy.

    I made this version of "macaroni salad" today because I am trying to lose weight. It is a great alternative to the usual mac salad you make with mayonnaise. I'm not a big fan of cheese, but when you add the pepper jack along with the red wine vinegar, olive oil, and salsa, it gives the salad a "POP"!!! My husband even liked it!! He said we should add cucumbers to it next time. GREAT Salad, especially with burgers w/Pepper jack sliced cheese on top!!!

    This is wonderful!!!
    My husband even liked it! Note: do not make it ahead of time....the macaroni sucks up the dressing if you make it the night before serving....Make it the day of your cook out!

    I made this recipe two Thanksgivings ago, just for a change. Everyone who ate it LOVED it, and from then on, I've gotten many requests to make it again. It's just not the typical macaroni salad. People need to give it a chance! I love it with really hot salsa.

    This recipe travels well. While most pasta salads contain Mayo or similar dressings that need constant refrigeration; this one doesn?t. Its lack of Mayo like products don?t distract from its great surprising flavor. I made this salad to take to a picnic it was gone in a flash
