Tastes good, it's healthy, and it literally only takes 10 minutes to make. Winning combo- great for picnics/ parties.

This is one of my favorite summer salads. I make the entire recipe of dressing and add some of it to half the veggies for the first meal. After that meal, I pour the remaining dressing over the left-over veggies and refrigerate for another meal. When it's time to prep the next meal, I chop some more veggies and add to the mixture. SO-O-O-O Good!

This is the best salad! It is also the secret of my diet. Just go light on the evoo, add some grilled fish or chicken, and the pounds fall off of you!

This is the best salad I've eaten in a long time. I agree with the others that it is best the next day (and the day after, etc.. The dressing is so on target, it really complements the salad. Way to go Rachel!!

This was SOOOOOO good!
I doubled the recipe. Instead of doubling the red onion, I added Vidalia onion. I also used a mix of green, yellow & orange peppers and added a tablespoon of minced garlic.
Talk about yum-O! Even my hard-to-please husband (he usually just says "This is okay" raved over it.
I agree with the other reviewers that allowing the salad to sit overnight contributes to the taste.

I brought this to my sister's house for Easter dinner. Since there were about 20 people and about 15 who tried it, I decided on minimum heat. All who tried it enjoyed it. I made it two days in advance as another reviewer suggested and I believe it added to the taste. Quite good!!
