I actually used Talapia fish instead of Mahi Mahi, and was missing the shallots and carrot for the couscous, but overall it was great, citrs and spicy flavors with the salsa and fish, and a more mild version of it with a curry kick for the couscous.

I have never been a fan of curry, but I loved this. The entire dish is definitely a repeat.

I usually stay away from grilling fish as it tends to be dry, or stick to the grill or fall apart. I bought some really beautiful Chilean sea bass, though and thought it would be perfect with the mango salsa. AND IT WAS!!!
I made everything as directed except, deleted the cucumber from the salsa, and the raisons from the cousous. I used excess chives from the salsa in the coucous instead of green onions. All of the flavors really work and the excess salsa is delicious with chips and will be used with fish tacos within the week.

We loved everything about this recipe! The mango salsa is a perfect blend of all ingredients and a perfect complement to the grilled Mahi. I love couscous and this curry couscous is unbelievable! I love to add my own touches to recipes to make them my own, but I wouldn't change a thing about this one.

Halfway thru preparing an ambiguous dinner (sauteing sweet red peppers and onions my hubby was starving and I ran out of inspiration. Searching online for fish taco recipes, I came across this meal plan. I jotted down the few ingredients and had to run back to the computer only once to double check the couscous ingredients, otherwise prep was extremely easy. The whole thing was ready and plated in 15min. Each element of the menu was surprisingly delicious! "Delicious" doesn't actually describe it. The meal is light, fresh and filling since it has a balance of the 5 flavors (sweet, sour, salty, bitter, spicy. We split the recipe for the 2 of us, used the sauted peppers and onions with some warmed taco shells. We will make again!
