These potatoes are an absolute HIT at my house! My teenage boys can't get enough of them! The cheese is expensive however, so we only make this at Thanksgiving and Christmas, but that makes them even more special. (Sam's Club sells it for about 1/2 what our grocery store does. I always put in more cheese than is called for, but it's not necessary - we are just cheese lovers here. I'd never heard of "manchego cheese" before, but it's absolutely delicious. This recipe is one of my family's favorites, that is certain.

I made this recipe for the first time for Thanksgiving 2009, for my family. It was fantastic!! I couldn't find my printed recipe this year (2010 and they want these potatoes again. I'm back printing it off one more time. This time I will make sure I know where I save it. Thanks Rachael!

These potatoes were so easy to make and delicious to eat even without gravy... perfect starchy cheesy side dish!
I used a mixture of cheddar and pepper jack... the BOMB!
The best part was when I made thin patties the next day with the potatoes and fried them up to make potatoe pancakes.... my family loved them so much not one patty was left over.
So make sure to double the recipe to ensure you have enough for potatoe pancakes the next day =0

The original recipe is great! but the manchego cheese can be a bit expensive, so I switched over to cheddar for a casual dinner! and they came out soooOOooo good....

This recipe is so easy and sooo good! I made it once and paid about $18/lb for the manchego cheese and then I read the review that said costco had the cheese for much cheaper. I just found it at costco in Michigan for $8/lb! Its worth the money~trust me. Everyone should try this recipe. Plus, I used the leftovers for potato pancakes the next morning.

The family raved about these potatoes! They loved the skin flecks and especially the CHEESE! I will definitely look at Costco, however, for manchego, as our local mega-mart charged $25 per pound - YIKES!

omg i luv this recipe... i tried it last year for thanksgiving but used monterrey jack cheese instead of manchego. it still tasted great though. AND im doing it again this year!!!!! thanks rachael ray. by the way,,, i LUV UR SHOW!!!!

There are 2 kinds of Manchego cheeses - aged and unaged. You want the UNAGED Manchego. The unaged is softer and will give you the nutty flavor. The aged is much sharper and more expensive. Substitutes you might try are Monterey Jack, Mozzarella or Oaxaca. Hope this helps.

This is a great dish. If you live around NJ you can get Manchego cheese at Costco for $5.99 a pound.
I paid 15.99 the first time at Shop Rite.

My family and I love this recipe but I added a little bit of garlic and some bacon bits to this. I make this all year round and we never have leftovers! this will be the first year I am making Christmas dinner for my family and I hope they love them as much as we do!
