    Wow. Ok - well it took me almost an hour to make it, but it was so worth it. This is Really. Really. Good. Mashing plantains is not as easy as it should be to my way of thinking, but the shrimp/plantain thing could easily be a meal all by itself.

    I made this one after seeing the show the night before. I skipped on the Plantain Mash, and instead put the Garlic-Tomato Shrimp over the rice.

    Also used the Quesadilla recipe from another episode and added smoked pimentos (from a jar to the quesadillas. (Who knew making quesadillas so so easy!!

    Although the entire meal took 45 mins to get to the table (I am a notoriously slow chopper! It was a huge hit!!

    The entire family kept finding resaons to wander in and out of the kitchen to smell the tempting flavors while cooking, and at the table, the comments were, "What's the special occasion?" and "YUM!!"

    I will make this one again and again. I can't wait until we have company over for dinner!!

    By the way, I AM NOT A GOOD COOK, usually....

    Living in Miami, I am surrounded by amazing cuban food everywhere! This was a great fake out for cuban food. Quick and easy, great for entertaining too. Very tasty-although I prefer ripe (blackplaintains.

    The flavors of all of the dishes were incredible. They were a big hit at a dinner party I had last night. Even those who didn't care for shrimp, were having seconds of the plantains and shrimp. However, it did take about an hour plus to cook. I think prepping a lot of the stuff in advance would really help.

    I made this on valentine's day and it was awesome. I used chicken breast instead of steak.. The garlic-tomato shrimp was ideal and since we eat plantains all the time, I was worried that I wouldn't like their consistancy once mashed. I decided to just fry them like I usually do and serve the shrimp on top, still great! I also went with yellow rice and a baked sweet potato on the side. This recipe is flexible and delicious.

    Took too long to make! The plantains were hard and took longer than the time instructed in the recipe. The shrimp was good though.
