Ingredients
  • Meatballs:
  • 1 1/2 pounds ground sirloin
  • 1 large egg, beaten
  • 1 cup (3 handfuls), Italian bread crumbs
  • 1 medium onion, chopped fine
  • 4 cloves garlic, crushed and minced
  • 1/2 teaspoon crushed red pepper flakes
  • 2 teaspoons (several drops) Worcestershire sauce,
  • 1/4 cup (a couple of handfuls) flat-leaf parsley leaves, chopped
  • 1/4 cup (a couple of handfuls) grated Parmigiano or Romano
  • Coarse salt and black pepper
  • 5 Minute Marinara Sauce:
  • 2 tablespoons extra-virgin olive oil, (2 turns around the pan)
  • 4 cloves garlic, crushed and chopped
  • 1/2 teaspoon crushed red pepper flakes
  • A handful flat-leaf parsley leaves, chopped, about 2 tablespoons
  • 1/2 teaspoon dried oregano
  • 1 (28 ounces) can crushed tomatoes
  • 1 (14 ounces) can chunky style crushed tomatoes
  • Salt and freshly ground black pepper
  • 4 semolina crusty sub rolls, with or without sesame seeds
  • 1 (10-ounce) bag (2 1/2 cups) shredded provolone or Italian 4-cheese blend
  • Shredded basil (sweet) or shredded arugula (spicy) leaves, for garnish
  • Oven fries, as an accompaniment, recipe follows
  • Oven Fries:
  • 4 medium white skinned potatoes, each cut into 8 wedges lengthwise
  • Extra-virgin olive oil, to coat
  • Grill seasoning blend or coarse salt and black pepper
Directions
5 Minute Marinara Sauce:

Preheat oven to 450 degrees F.

Place ground sirloin in a large mixing bowl and punch a well into the center of meat. Fill well with the egg, bread crumbs, onion, garlic, red pepper flakes, Worcestershire, parsley, cheese, and a little salt and pepper. Mix up meatball ingredients until well combined, yet not over-mixed. Divide mix into 4 equal parts, roll each part into 4 balls and space equally onto a nonstick baking sheet. Place meatballs in oven and roast about 12 minutes. Break a meatball open and make sure meat is cooked through before removing from the oven.

Heat a medium saucepan over medium heat. Add oil and garlic. When garlic starts sizzling, add herbs and crushed pepper. Allow oil to infuse for half a minute, then stir in the tomatoes and season sauce with salt and pepper. Bring sauce to a bubble, reduce heat, and simmer until meatballs are removed from oven.

Combine meatballs and sauce and pile into sub rolls, 4 meatballs per sub. Top with shredded cheese and place under subs under broiler to melt cheese. Top with shredded basil or arugula and serve with a pile of oven fries, recipe follows.

Oven Fries:

Drizzle potatoes with a generous pour of extra-virgin olive oil. Toss potatoes with seasoning blend or coarse salt and pepper. Place potatoes on a nonstick baking sheet and roast 20 minutes or until just tender. Give the baking sheet a good shake after 10 minutes to avoid sticking.

These were one of the best tasting things I have ever eaten. I personally did find the amount of parsley and onion a little overwhelming and might use a little bit less of each next time - but even so, I still loved them. My husband asked that these get made on a regular basis! The only thing I would do differently (purely my taste preference) is to use less onion, and sweat them before adding to the mixture. Yum! This was awesome. I liked the heat from the flaked red peppers, but if you are a mild-sort, would maybe want to add less of that. I was a little hesitant when I mixed the meatballs together and saw how much ingredient versus meat was in each meatball, but it was perfect with the sauce. THIS RECIPE ROCKS!!! I had 9lbs of 90/10 ground beef that had to be cooked or thrown out. I wanted to do something beside just browning it and freezing for later use. I am only reviewing the meatballs, as I did not make the marinara sauce. I give it only 3 starts because they were ok. Not great, maybe all the flavor comes from the sauce. This is the only meatball recipe I use and every time I serve them they are a hit. The only difference is I use about 1/3 less red pepper flake, I sub in onion powder instead of onions, go a little light on the bread crumb and I mix in a splash of club soda. item not reviewed by moderator and published

First I will say that you will need a sturdy bun. I ate the first half by fork and knife and the rest normally. My boyfriend doesn't like the texture of meatballs made with breadcrumbs and egg so I made them with just the meat, onion, and spices on the stove. These were good but a bit dense for my taste, so stick to the original recipe. Besides adding a bit more red pepper flakes, which I highly suggest, I used mozzarella instead of parmesan, which I won't do again. I made these this weekend and we LOVED them. Even my picky 10 year old boy loved them. I put my own twist but used Rachaels basics. I used 2 lb of ground beef and 3 pork sausage patties (wanted to make extra for spaghetti the next day.) For Italian Bread Crumbs, I used 4 pieces of white toasted bread crumbled with 1 tablespoon of Italian seasoning. 2 eggs, then the rest of what Rachael said. This made about 32 golf ball size meetballs. Subs were great and Spaghetti was amazing the next day. I used Paul Newmans spaghetti sauce for both. I just mixed up a batch to serve for dinner tonight. They are in the oven now, but I thought the meat mixture looked really dry when I tried to mix it. I checked the recipe for a little liquid and found none was called for but it was so dry I couldn't get the breadcrumbs moistened. So I added a little leftover tomato sauce I had in the fridge and they are cooking now.I'm sure they will be delicious. This may sound silly, but I am not sure what kind of breadcrumbs to use in this recipe! The recipe calls for "1 cup (3 handfuls), Italian bread crumbs". Are these the packaged, dried and seasoned variety you can purchase in the store? Or, are these the kind you make at home by taking day-old Italian bread and making crumbs in the food processor? I used the seasoned kind from the grocery store, but only used 1/2 cup, as a full cup seemed like a lot. I made these for a friend, so I didn't taste them to know if they turned out okay! This recipe was not only super quick and easy to make, but also got 4.5 stars from my picky eater husband! The meatballs were moist and delicious. The end result sub was loaded with gooey cheese and very tasty. My 13 year old daughter made this for the family. It was very good. Like has already been said, I guess my bread wasn't "crusty" enough because they got soggy on the bottom even after toasting. My family and friends all love this recipe! I did however change it a little to make it my own. I still use all of the same ingredients but instead of beef I use ground chicken and devide the mixture into 4 burger patties. Once they are cooked I cover them with some grated mozzerella cheese and cover to let it melt. I then toast onion burger buns, put some marinara sauce on both sides and then add the chicken patty. I made 5lbs of meatballs based on this recipe for a Superbowl Party. I made 4 batches individually to ensure that I had the proper mix and quantities of seasoning. My local grocery store didn't have ground sirloin so I used "Market Meat" which is Chuck, Sirloin, Beef and Pork ground together. I made and cooked the first batch to the recipes specifications then conducted a taste test. The meatballs were rather bland. So for subsequent batches I increased the ingredients/seasonings and added Italian herbs. They came out MUCH better, lots more flavor and were very moist. They disappeared at the party. Made the meatballs and sauce for a take along picnic at a local winery. Instead of baking I browned in a skillet and then added to the sauce to finish cooking. I packed it all up and we made the sandwiches when we got there. Everyone raved how good they were, even my girlfriend who said "I don't normally like meatballs" and she had seconds! Wow! These meatballs were really good! The only changes I made were to replace the fresh parsley with about 4 teaspoons of dried parsley, replace the garlic with a couple teaspoons of garlic powder, and add a little salt to the meat mixture. I just got done making this recipe and finishing off one of the subs. The meatballs and the sauce were very good. I've tried better from a couple different restaurants but for being homemade I really enjoyed it. I am not a fan of spicy food and I really dislike red pepper. I made the recipe the way it is listed because I usually have to make it once before modifying. Next time I will leave out the red pepper and reduce the parsly in the meatballs (not the sauce) in half. The recipe states to combine the meatballs and the suace and then place on the bread but I like the meatballs to sit in the sauce for about five minutes first to absorb it a bit. I added a little montreal seasoning to the meatballs since they seemed to need something. The red pepper flakes are wonderful in this recipe. I simmered a jar of arrabiata with some red wine for a little more kick. Rachael's first cookbook had a similar recipe with provolone squares stuffed inside the meatballs. Since half of the cheese seeped out, I like the way she did it here better. Oven fries get crisper if you use unpeeled russetts for 45 minutes, but then it's not a 30-minute meal (still worth it).
