You can create up to five timers

Ingredients

  • 2 handfuls good quality pitted green and black olives
  • 1 cup giardiniera, drained pickled cauliflower, carrot and hot pepper mix
  • 4 sesame or cornmeal Keiser rolls, split
  • 8 deli cut slices sharp provolone
  • 1 (15 ounce) can artichoke hearts in water, thinly sliced
  • 2 roasted red pepper, drained and thinly sliced

Directions

Preheat griddle or grill to medium-high heat.

Place olives and pickled veggies in food processor and pulse chop into a relish. Divide the relish among 4 sandwich bottoms and top with a single slice of cheese, sliced artichokes and peppers then add another slice of provolone to each sandwich and press tops in place.

Place sandwiches on grill and press with heavy skillet weighted down with cans. Press a few minutes on each side, remove, split and serve.

    I definitely thought these were tasty. However, I feel the olives completely overpower the giardiniera. Don't get me wrong, I love olives, but I was expecting a bit of that spicy, pickly flavor from the pickled veggies, which I didn't get at all. We have a panini press, which is slowly becoming one of my favorite kitchen appliances, and these sandwiches were awesome made in the press. I used sesame seed whole wheat kaiser rolls, which added another element and made them super tasty.

    This is truly delicious, wonderful, and a meal by itself! You won't miss the meat at all but the quality of the bread is crucial; use a thick-crusted rustic bread. I even hollow it out a bit so I can get more filling inside. This is the perfect sammie!!!

    being a girl from South Louisiana I know just a little bit about Muffalettas : this was awesome!! I added a little olive mix to it & didn't miss the meat all.
