This is truly delicious, wonderful, and a meal by itself! You won't miss the meat at all but the quality of the bread is crucial; use a thick-crusted rustic bread. I even hollow it out a bit so I can get more filling inside. This is the perfect sammie!!!

being a girl from South Louisiana I know just a little bit about Muffalettas : this was awesome!! I added a little olive mix to it & didn't miss the meat all.

I love everything Rachael cooks and this is no exception. Didn't have any artichokes and messed up recipe by processing the red peppers with other ingredients, but it was still delish. When I make a Rachael recipe, I know that it is healthy and delicious.
