I just happened upon this recipe on foodnetwork.com. The "muffin" idea sounded different. Invited the family over and everyone loved it. They were amazed that they cooked in only 20 minutes. Definitely a repeat - from someone who has never been a meatloaf fan!

I love meatloaf, and I have finally found a recipe that my guy likes too! I did however have to make this recipe a few times befor perfecting it. a lot of people didn't care fot the consistancy of the meatloaf. If the veggies are over processed in the food processor, you will not be successful. onions and peppers hold a lot of water, so you can also try cutting back a little. also different sala brands are more watery that others, also keeping in mind that tomatoes hold quite a bit of water, to be let out in cooking as well. bbq sauce consistancy should be factored in too! Meatloaf was so good- it stayed very moist. Also, try the cream cheese mashed potatoes on the bottom of the recipe page- to die for!!!

The muffin sized meatloaf was very good. My husband who hates meatloaf actually liked these and said he'd like me to make them again. Mine turned out a little too spicey for the kids though. Not sure why so spicey, I followed the recipe exactly. Anyway, I would recommend it!
