YUCK! I hate meatloaf; so does everyone in our social circle. So, with trepidation, I made these for my supper club. Well, let me tell you, the crowd was howling! Initially I was jeered for my dinner creation. Then, as a few people ventured to bite into and sample the cuties, the laughter subsided, the talking stopped, the snickering ended. Ha-ha! I knew it! Fianlly, a recipe that shuts up the nay-sayers. The treats were thoroughly enjoyed and have been requested again since. I did amend the surloin with some pork (sorry, Rachael! and added some hot pepper flakes and some cayenne pepper--the crowd likes heat. For a meatloaf, this one is definately a keeper!

EVERYONE LOVES THIS RECIPE!
And I love it too because it is so fast, easy, and tasty! I love to use Sweet Baby Ray's BBQ Sauce and Emeril's Steak Seasoning. The salsa adds a great something extra and I hate when I realize I'm out in the middle of cooking!

This is the only way my sister and my children will eat meatloaf. it has a lot of flavor and does not taste like a lump of fat.

my husband does not like meatloaf, my little boy does not like meatloaf. I tried this recipe because of the veggies, thought it would be a good taste and cute for my son because he could "pick out" which one he wanted. This was the biggest hit!!! My husband is still looking for the leftovers (arn't any and still talking about it after 3 days....I will be making this again for sure

Best meatloaf I ever made. I like it spicy, so I replaced the one green bell pepper with 2 Chili Peppers. I also used 1/2 cup of a hot, roasted corn salsa instead of tomato salsa.
