Simple, fast and you cant ruin it! I've tried it with sausage, ground turkey and even with the ground "fake-meat" type products and they all come out great.

Hint - After you take them out of the oven and let them sit a bit, then take them out of the tin and rest on a rack. So they don't have to sit in the grease and cooking liquids.

EXCELLENT and EASY! Teenager says they are "most awesome" and will easily eat 1/2 of them if allowed. Steak seasoning really makes these unique and tasty. Use low-fat meat to cut down on grease and add a bit more bread crumbs and enjoy!

I just made these as part of a Halloween-themed dinner. I placed green olives on toothpicks and set two on each muffin and called them "Meatloaf Monsters." Anyway, this recipe was so TASTY! I don't think I'll ever try another meatloaf recipe again. The BBQ sauce really made them unique and it was very very easy to put together. Very kid and adult friendly! Normally I don't think all of Rachel's recipes are under 30 minutes, but this was one definitely was!!

Great recipe. Although I think I needed more breadcrumbs.

However, mine always come out a little too wet. They are still great but cooking them longer helps some.

I have been looking for a good meatloaf recipe and this one is great! I love that the celery & pepper was "hidden" in there so that my kids got their veggies without complaining. I doubled the bbq sauce so that there was enough to serve at the table. I also made the mashed potatoes and the green beans - also very good. Thank you Rachael!

Hehe. Okay seriously, I've never been a fan of meatloaf, its so boring and blah. But this recipe is anything but boring! The mashed potatoes were great as well. It is so good I would even serve it to the in-laws. Thats how delicious it is.
