    I traditionally make my meatloaf with cream of mushroom. But this dish was great and really simple to make. I didn't have any breadcrumbs so I just put Ritz crackers in the food processor and made my own. I also had some meat left over and my hubby enjoyed it as a hamburger.

    These were the first Food Network recipes I cooked.

    Basically, after everything was prepared, I sank my teeth into the meatloaf it was AWESOME! Whenever you can, try this recipe.

    The potatoes on the other hand were okay. I've never had mashers with cream cheese. It was a different taste. I ended up adding another half cup of milk to moisten it up a little.

    I also had the "Micro-way-cool Bacon and Green Beans" with this meal (these three recipes were all in one episode. I couldn't keep my hand out of the chopped bacon. These were very good.

    This dish was easy to prepare and has a bold, delicious flavor. Definitely not a boring meatloaf. The green pepper and celery added a nice crunch. I did not have my muffin pan, so I shaped the meat into a big loaf and baked it at 350 for an hour. I still used the extra sauce as a glaze during the last 15 minutes of cooking.

    this recipe was so easy!and my family just loved it, the taste pleased both the adults and kids! and i have some picky eaters. thank you rachel! keep the great tasting,and easy recipes coming!
