    I'm really sorry Rachael, I am not one to leave critical reviews, but my family deemed this recipe "Roadkill Muffins" after I made it. The flavor was great but they came out a greasy, mushy, shapeless, awful-consistency mess. And unless you want us all to get food poisoning, there is no way they are fully cooked in the time suggested. Will NOT make again.

    This was the first episode I ever saw of your show. I was injured and off work for a while. I decided to write down these directions and make this for my family. It has become a tradition in my house now, and they all love it. I have made the potatoes a few times for family gatherings and they want me to bring them every thime now.

    These muffins were "yumm-o" according to my children. I have to admit that I am not a fan of meatloaf, but I did like the taste of these.

    Growing up one of my favorite dishes was my mom's meatloaf. So when I came across this recipe I was really excited to try. I thought BBQ and salsa might have been a little too different but they came out great. My mom even said she liked it more than hers. My boyfriend loved them also. Thanks Rachael!

    If someone was trying to coherse me over to their house to try a meatloaf recipe, it might take a li'l more convincing because meatloaf is meatloaf, right? [shrugs] WRONG. This recipe is AWESOME!

    I went over to a friend's. She made this for me. My mouth's watering just thinkin' about it. I'm gonna have to make it again tonight. It was just too good.

    This was the first recipe that I have tried from this site and it was great. I tweaked it a bit by shoving a cube of mild cheddar in the middle of each muffin and laying a 1/4 piece of peppered bacon on top of each muffin. Bacon-cheesburger muffins?? Good stuff!!

    Her meatloaf muffin recipe is a huge hit! Even my brothers love it! But where was Rachel back in my "married" days when my husband used to whine about me not knowing how to cook? Who's laughing now! Thanks, Rachel. You've turned me into a chef.

    This is the best meatloaf we've ever had. The only change I made was to substitute the Montreal Streak seasoning for the Mesquite (it seems to compliment the BBQ flavor much better. Instead of muffins, I make one large loaf and bake it (covered at 350 degrees for about an hour and a half.
