    This is one of my all-time "go to" meals. I buy a meatloaf mixture from my butcher and put this recipe in the quick cook muffin tins. A great tasting BBQ sauce makes a difference (I use Sweet Baby Ray's. A comfort food in a cinch, and my kids love it!

    I made this last night and it tasted great. We did this with ground turkey to make it diet friendly for me. For my hubby I cut a cheese stick in quarters and wrap the ground turkey around the cheese. He loved it. Like another viewer I served this with the 5-Minute Individual Potato Gratins and fresh beets. It was a great meal.

    I made this with Melissa d'Arabian's 5-Minute Individual Potato Gratins, since they are also done in muffin pans. Both got rave reviews from my family. I made extra sauce for the meatloaf, and then used it on sandwiches today. Also, froze the remaining meat loaves to use next week.Great recipe!. Thanks, Rachael.

    I love this recipe. I have made it many times when I've had family or friends come over for dinner. I happen to love it along with the smashed potatoes and green bean recipe from the same episode. All three complement each other quite well.

    My kids, who are known for eating nothing but mac 'n cheese, just gobble these up. They are cute and tasty and fun. The great thing about this recipe is that you can tweak it if you don't have the exact ingredients and it still turns out good. I would also recommend reducing the amount of grill seasoning you use if you don't like it too spicy.

    i made these the other night. I tweaked the receipe a bit. I added 3/4 bbq sauce, no salsa because i didn't have any, 1/4 cup ketchup, no peppers and only 1 tsb of the seasoning.

    I thought that they were great and they were ready to eat in 25 minutes. the concept of the cupcake pans are great. I think that any meatloaf receipe cooked in this fashion would work.

    next time i will cut back the seasoning to 1/2 tablespoon because my husband thought taht it was a little too spicey. I thought that it was just right. I think in addition to this receipe a slice of panchetta on top of each meatloaf would be nice. im will with out a doubt make these again with my double tweeked recipe.

    I am known to be an excellent cook but have never been able to concoct a really good meatloaf.It's been years since I even made another attempt until today.I and Hubby are bowled over by how delicious they were,and so cute too.The only thing I added was a small piece of bacon on top of each one,and cooked them 30 minutes instead of 20.I served them with buttered new potatoes out of our garden and I'm here to say,YUMMY!!!!!!!! so good

    Growing up, I had to make sure I was home for Sunday dinner every week....and more often than not, my Dad would make meatloaf!! Needless to say, I stopped eating meatloaf all together once I was on my own! My 11 year old daughter, who likes meatloaf (and I NEVER made it for dinner wanted to make meatloaf one day...so I got this recipe and let her make it....I now have this once a week, or once every two weeks...I LOVE, LOVE, LOVE IT!!!! I make it when I have friends for dinner and it gets rave reviews!!! Thanks Rachel!!
