Ingredients

  • 2 ripe small to medium cantaloupes
  • 2 rounded tablespoons sugar
  • 1 lime, juiced
  • 1 1/2 cups spring water
  • 2 kiwis, peeled and diced or thinly sliced
  • 1/2 pint raspberries

Directions

Cut ends off each cantaloupe and stand upright. Remove skin in strips working around melons. Halve melons and seed with spoon. Chunk melons and place pieces in food processor. You will work in 2 batches. Fill processor 3/4 full. Add 1 tablespoon sugar, the juice of 1/2 lime and about 3/4 cup spring water. Pulse grind them process soup until smooth. Adjust sugar to your taste and pour soup into 2 bowls, repeat process. Top each soup bowl with kiwi and raspberries and serve.

    First time I tried a sweet fruit soup, very interesting. I omitted the sugar because the cantaloupe was sweet enough. My children loved it, however I found it a bit bland. If I were to make this again, I'd use a combination of cantaloupe, honey dew and santa claus melon, swap out the kiwi for a tangerine or clementine, add some sliced strawberries, and maybe blueberries - if at all it turns too tart, I'd use just a tablespoon worth of honey rather then the sugar.

    I have not yet tried this recipe, but it seems to be a great start to a healthy course. Just play around with it and add spices such as freshly grated ginger, swap out the sugar for honey, and make sure to buy in-season, flavorful fruits.

    The soup was lacking something to make it taste like something other than just pureed cantaloupe. The bites with kiwi were tasty but the others were bland.
