This is a real "guys meal"; I really liked it, but the hubster LOVED it. I made it because I was looking for a really easy extra-quick, "throw-it-together-and-eat" dinner after a pretty rough day. Since this took about 20 minutes (By the time the chicken was browned, everything else was ready to put together..., this SO fit the bill. Even though I halved the recipe for just the two of us, it looks like we'll get a dinner and two lunches each, so this makes a LOT.
I'm planning on switching it up a lot, using different meats, cheeses, taco/flatbreads, etc., as a real use-what-I've-got-on-hand-emergency-rations-type meal. This is SO a keeper!

Really great and easy to prepare. My grocery store was out of ground chicken, so I used 1 lb ground beef and one shredded rotisserie chicken instead and it was wonderful. Only other change was to add a can of diced green chiles and some extra hot sauce for a little kick. This is sure to become a staple at my house; thanks Rachael!

This was great! It was super easy to make and tasted amazing. I made a couple of changes, I used whole weat tortillas in place of spinach, I used tequila and lime salsa in place of taco sauce (I also added some fresh lime juice while layering. I put garlic powder, white pepper, cyanne pepper, crushed red pepper, and chopped bell peppers in the skillet. I made it for my husband and in-laws and it was a hit, This is going to be a regular now. =

Looking to be able to use what I had im my kitchen I came across this recipe.. I pretty much followed it to a T except that I used ground beef as my meat..LOVE IT.. and will def make again but next time will try it with the chicken :

Loved it! Topped with some local made salsa and yummy! Easy to do my picky eaters even enjoyed it! Froze and reheated well! Will have to do again soon!

This was a really fast and easy dish that any picky eater will enjoy. I was able to have dinner on my table it just over 30 min and there was no left overs. I changed two this used plain tortillas and fresh salsas. This one is going in the book!
