I rarely cook and when I do, meals don't generally come out very well. However, this dish was extremely easy to make and tasted great. I made these with corn tortilla shells.

Family loved it, easy to fix. Had to substitute Turkey for chicken but still tasted wonderful. Tasted even better as a left over.

Everyone really enjoyed this. I took some hints from previous reviews and added one can of diced green chilies, used pepper jack, and added a little more heat with some Mexican chile sauce. I also added a little chopped cilantro.

This was outrageously good! This is the first time my husband asked if we could eat it again for supper two nights in a row. I liked how Rachel explained that she was teaching a method, so that one can freely sub other ingredients. I used pinto beans and garlic herb tortillas topped with a RR guacamole I had seen her make on a different episode.

This truly took less than 30 minutes. I needed to substitute a few things because of what I had on hand. I used monterey jack cheese instead of cheddar, but I think it would be tasty either way. My whole family loved it, even my husband who wasn't in the mood for mexican food that evening. I will definitely make this again.

My family loved this one. I used garbanzo beans and although the kids turned their noses at the beans, in this dish they ate them. I used salsa instead of the taco sauce as she recommended as a substitute and crushed tomatoes to substitute stewed tomatoes and it was a big hit. I may make it for a party cut into small pieces.

I was very excited to try this recipe after viewing the show.
My family enjoyed this recipe very much.
I thought it was very easy and I enjoyed making this dish as much as I enjoyed serving it to my family.

My husband and family loved it. I did make a few changes. I DID NOT use the chucky red onions, I did use Taco bells dry taco seasoning mix, Rotels Mexican tomato mix with cilantro, lime, green chilies, onions and half a can of corn. I used the rest in my salad.
