This is a really good recipe, but you can prepare it faster using already cooked and cut up chicken. Then when you serve it, top it off with sour cream. Makes this recipe go from good to great.

Rarely does a recipe get any simpler than this...using ready-at-hand ingredients and tortillas for the "noodles" makes for a great meal. Also Rachael has kept the prep involved to a minimum - very little chopping!

This was a quick easy meal to make! I called my mom from work and gave her the recipe over the phone to make. Our family enjoyed it very much. We didn't make the fruit and veggie salad, but we will next time around.

Great idea for an old standard! I can't eat gluten products, so we switched out the flour tortillas for corn.
As a fan of anything Mexican, this is going in the recipe book!
