MY FAMILY ENJOYED THIS RECIPE VERY MUCH IT REALLY IS QUICK AND EASY I HAD MY THREE MONTH OLD SON IN MY ARMS AS I PUT THE INGREDIENTS TOGETHER IN MY BAKING DISH...I ADDED CILANTRO ON TOP WITH SOUR CREAM ON THE SIDE EXTRA CHEESE AND I ONLY USED TACO SAUCE NO TOMATOES MY HUSBAND IS LOOKING FORWARD TO HAVING GUACAMOLE WITH IT NEXT TIME...(AND HE DOES NOT LIKE MEXICAN AS MUCH AS I DOYUM

I'm a chef in making and that took me 13 year to get there. If I had found Rachal's recipes 11 years ago when I first got married...things would have been a lot easier!
I loved this recipe...my husband could not get enough of it and I'm certifiably...a good cook.

If your family likes Mexican, this is a quick variation on soft tacos that's delicious and fun to eat. Only thing that might prove challenging is cutting through the tortillas after it's baked--might not come out all that neat. But it tastes great even if it slops a bit. You might want to use a little more cheese than the recipe calls for, too...I layer it on the meat before I put on the tortillas, then again on top of them...it seems to glue it together better.

I love not having to run to the store and buy anything special, I had everything I needed! It was so delicious, I used sun-dried tomato tortillas, very yummy! I used to hate to cook, until I saw her show and decided to give it a try. Now I love it!

Thanks to all who made comments on this recipe, I heeded the suggestions and embellished it to our tastes. Here is how I improvished: I only used 1 pound of meat, selecting ground turkey breast. Used a whole yellow onion, corn tortillas and pepper jack cheese. I kept the spice amounts the same even though I did not use the second pound of meat. My additions were; a 1/4-1/2 teaspoon of canned, pureed chipotle chilies, 1- 4oz. can of Ortega diced green chilies (I selected jalapeno for the added flavor boost, added some dried oregano, 2 cloves of minced garlic and red & green bell peppers, all added in with the meat. I chose to simmer the sauce for a short time to take the raw edge off the spices and allow the flavors to meld (of course this adds time to the recipe. Used a 2 quart pyrex and the ingredients fit perfectly. I served the lasagna with a dollop of plain non-fat yogurt. The recipe calls for scallions but no where does it say where they go. I added them as a garnish with the yogurt. The dish was great and we had to stop eating it, as we kept taking one more sliver!

I have tried many of Rachael's recipes, and this is the first one I have not enjoyed. The lasagna was way too bland and I think ground beef would have been a better choice.

My family loved this! It is so delicious and easy and we had leftovers the next day that were just as delicious. Way to go Rachael! I used 1 1/4 pounds of ground turkey and 2 cans of black beans the second time around and liked the bean/meat ratio much better. I also added a can of tomato sauce to make it saucier. And a little Tabasco!
