My husband and I love this recipe. I make it all the time. I don't think the crust is too thick with 2 boxes of muffin mix as long as you use at least a 12-inch skillet. I like to add chopped jalapenos and shredded pepperjack cheese to the cornbread mixture. Also, try making it with ground turkey for a healthy alternative. It's great the next day, too!

I followed the advice of many of you here and only made this with one box of Jiffy and I am glad I did. I think 2 boxes would have been WAY too much crust. I also used black olives instead of green. Next time I think I'll make this on a regular pizza dough. No need for the extra fat and calories of corn bread! I also think this DEFINITELY needs the taco sauce. I would not serve it without it!

This is so easy and it really does taste good, especially for the time put into it. It's good enough, I have made it a few times for my family. One of the nicest things about it is that it can be made of ingredients you just have around and doesn't require a trip to the store if you already stock some of the basic groceries like I do.

I just made this tonight and everyone loved it. My 4 and 5 yos asked for seconds! It was easy and straightforward to make and with ingredients I usually have in the house anyway. If your family isn't really big on cornbread, I'd halve the cornbread part, otherwise it's quite thick... It also took almost twice as long to bake as listed.
I used canned corn instead of frozen and green pepper instead of red. I wasn't sure about the green chilis but next time I'll use the whole can instead of half. No olives but extra tomato. This was a big hit, the little that's left over will be gone for lunch tomorrow :
