    This was a hit with my family! I followed the advice of others and only used one box of cornbread mix. I would definitely not use two; one was perfect! The cornbread crust was a different and amazing flavor for this mexican pizza! The recipe was easy to follow and quick to make!

    My family raved about this recipe. Definately only use one box of cornbread mix though, I used just the one, and I think two would have been way too much. This is going to be making a regular appearance at our dinner table....and it is so quick and easy!

    Great dinner recipe, the whole family loved it, even the picky eaters! Couldn't get enough of that sweet and mexican combo. But definately only use ONE box! It was just the right proportion. Can't wait to make this one again!

    This satisfies my cravings for home-made Mexican food flavors. I only use 1 box of cornbread mix. I think 2 would be way too much crust. I do like the sweetness of the cornbread with all of the toppings, but I also just love cornbread in general. You could always make the cornbread from scratch to control the sugar, which is easy enough.

    WAY, WAY too much cornbread. The cornbread overwhelmed the flavors. When I try it again, I will cut back the cornbread to a quarter of what's called for.

    First time I made this there was way too much cornbread and no flavor. I loved the concept but I had to change the recipe.

    Crust
    1 - Package Martha White Mexican Cornbread Mix
    2 tbsp - Oil
    1 Tsp - Ground Cumin
    1 Tsp - Paprika

    Preheat oven to 400 degrees. Heat oil in 12" cast iron skillet on stove.

    Pour package into medium bowl. Add spices then mix as directed on package. Pour heated oil into batter and mix in slowly. Pour batter into heated pan and spread thin. Place in over for about 8 minutes.

    Pizza
    1 lb - Ground Beef
    1 Tsp - Cumin
    1 Tsp - Paprika
    1/2 Tsp - Ground Black Pepper
    1/4 Tsp - Red pepper Flake (add more if you like it spicier
    1/4 cup - Onion, Diced
    1/4 cup - Green Bell Pepper, Diced
    1 can - Mexican Whole Kernel Corn
    1 can - Green Chilies (I use mild but you can use hot
    1/2 Cup - Pace Chunky Picante Sauce (Or you favorite salsa
    1 Pkg - Taco Seasoning
    1 1/2 Cup - Grated Cheese - your choice but I use a pre-grated taco mix

    Heat 12" Cast Iron Skillet on stove. Add meat and spices. Cook until about 1/2 done. Add Onion and Bell Pepper. Finish cooking until meat is done and onion and bell pepper are just beginning to get soft. Drain meat throughly. Return to hot pan. Add Corn, Chilies, Picante, and Taco Seasoning. Mix well and remove from heat. Top cornbread with mixture then top mixture with cheese. Return to oven for 10 minutes. Enjoy

    I'm always looking for easy and delicious one-dish recipes, but I probably wouldn't make this again. I agree with others that 2 boxes of cornbread mix is too much and the sweetness of so much cornbread over-powered the toppings. It wasn't bad, but it wasn't great. Sorry, Ra-Ray!

    I love Rachael so I hate it when I don't like one of her recipes. I thought the concept behind this was great and I was really excited about making it. But we were not impressed at all. We thought it over all had a bland mexican taste, and it all tasted the same. Oh, and I cut the cornbread mix in half bc of the other reviews and I'm glad I did bc there was alot of cornbread.
