    I was too tired to cook last night and I was about to make grilled cheese and tomato soup for the kids and then I sat down to watch the show. I realized that I had everything to make this. The kids LOVED it, both of my daughters went back for seconds and they were very happy that I made this instead of soup and sandwiches.

    This was fun to make and eat as well - plus it's an attractive dish. I used the full amount of corn muffin mix but now I agree with the other reviewers and would probably cut that to one box next time.

    CRUST WAS TOO THICK, SO 1 BOX WILL DO AND THE VEGGIE COMBO. WASNT ALL THAT... SOMETIMES RACHELS RECIPES ARE TOO BLAND... SOMETIMES YOU NEED TO COOK FOR LONGER THEN 30 MINS.

    I've made this recipe several times now. I love it! This recipe is quick and easy and I haven't served it to anyone who didn't go back for seconds. Even my dad loved it, and he's no fan of tomatoes which I used liberally as a topping. The leftovers are even tasty!

    This was delicious, filling and really easy to make. Even my 16-year-old stepson, a very finicky eater, took seconds. Like others who've posted reviews, I modified it slightly...I used 1 1/3 boxes of cornbread mix and half the other cornbread ingredients in Rachael's recipe, and it took about 22 minutes to bake at 400F. I also added black beans, roasted red peppers and corn to the meat mixture, then topped it with sliced black olives on top of the cheese. This was a big hit and I'll definitely be making it again!
