I made the corn bread from scratch and I used all beans (no meat and it was done in 30 minutes. My one year old and I loved it.

This dish was a winner! I watched the episode on tv and made it with roasted red peppers instead and it was amazing!

My kids loved this recipe! I tweaked it a bit by adding a can of black beans to the ground beef (our standard taco filling and actually used taco seasoning mix, and it was a HUGE hit!

Easy to prepare from pantry items. Tastes great re-heated in microwave. My husband took a piece to work for lunch and his office manager called me for the recipie! The aluminum-covered handle-trick worked for my T-Fal pan in the oven when baking this dish.

This was very tasty! I tweaked it a bit!
I added guacamole too, and next time...only one box of cornmeal mix. The toppings got a little lost with all the cornbread. Definitely make again.
