    Made this salad on a Pampered Chef Bamboo Platter to accompany beef enchiladas and black bean side dish. I used chopped red onion instead of the sweet onion slices and lots of cilantro. I did not seed the vine ripened tomatoes. It was so beautiful we took a picture of our dishes. Everyone loved the salad!

    This is the freshest tasting salad ever. If you love all the ingredients
    this salad is definitely for you. My husband doesn't like all the lime
    so I cut that in half. DELISH!!!

    I found this recipe when serving enchiladas to a large group and was worried that someone might need something else to eat. It was simple to make and has already been requested again!

    This salad is a perfect example of a few good ingredients making a wonderful salad. This is my go to salad for many mexican dinners. It is light and tangy and so easy to make. You can make it ahead of time and leave it to sit while you work on the rest of the meal.

    As a lover of avocados I always look for fresh ideas to revive my tastebuds. I made this for my mother one night and I had gone to work and while at work, she left a message on my phone to let me know that she had purchased more ingredients so that I could make more when I returned home.
    I love this flavorful salad. I personally would add sliced black olives and cracked pepper. Enough Said.

    I made this salad knowing I would love but thinking my husband would hate it. Boy, was I wrong! He has asked for it three times this week alone! The flavors work so well together - it's now a staple in our home and I can't wait to try it out at our next dinner party!

    I live in Southern California and love avacado's. Need I say more. This salad is the freshest tasting salad ever. It goes great with mexican dishes and is loved by all.

    Not sure how "Mexican" this recipe is, but my family loved it! Very easy to make,healthy with simple and clean flavors. My husband couldn't get enough of it. This is a new favorite, can't wait to serve it again!
