I have to wonder if the 3 lemons was a misprint in this recipe - or maybe it should have listed about how many tablespoons are needed - because based on the size of the lemons- the ones I had were larger so I only used 2 and the dressing was way too lemony - I was making this for a dinner party and unfortunately was not able to use it :(

The dressing in this recipe was the best. I did add a jalepeno for a bit of a kick. I would use it as a side with grilled chicken.

This recipe may be the answer to my long search for a great avocado dressing. However in my opinion, the THREE LEMONS ARE WAY TOO MUCH-- you can't even taste the avacado. I'm going to try it again, but start with 1/2 lemon, and increase to 1 lemon based upon taste, adjusting water and olive oil to get the right consistancy. I believe that I can play with it to get a winner.

I made the salad with a different lettuce, but it turned out great. The REAL STAR is the dressing though. It is so simple and tasty. It is a great dressing to serve with your Mexican night entrees. The salad dressing is also a great dip when thickened up a bit.
