This soup was full of delicious flavors - one of the best-tasting soups I've ever made. It was easy to prepare, very tasty and satisfying. One change - I substituted ground chicken for the beef; it was excellent! Otherwise, I followed the recipe as is. This will become a favorite recipe for my family table!

My husband made this stoup for me and it was wonderful! The combination of meat, mini penne, and veggies could not be better. An added plus-it reheats great. If you have never had escarole before, you are in for a treat. The lemon zest added just the right touch.

My father in-law used to make this back in the fifties & I forgot about it until I seen Rachel make it. Adding the panchetta made it even tastier. Two of my children came for dinner on the 19th & I thought I would try it & I'm happy to say that it was a hit. Keep up the good work.

The soup was fantastic!! When I make this again I will most likely leave out the beans, thought they were good, but my kids dont' care for them. The Itailain mixture on the grilled cheese was great, what a great alternitive to adding fatty sides like mayo...Great dinner!!

My husband doesn't typically care for soup but he loved the meatballs in this soup! The fennel made them soooo good! I used two cans of beans and one large bag of pre-chopped escarole and whole wheat pasta. The two cans of beans added more body and the whole wheat pasta was sturdy enough to hold up to the broth base. YUMM-O! I can't wait to eat the left-overs tomorrow!
