The whole family loved this easy to put together soup! A whole lot of flavor for fairly little effort! I used ground turkey and it tasted wonderful! Used a little less than 1/4 lb. of baby spinach and it was more than enough for us!

This soup is very flavorable. The meatballs are absolutely delicious! I bet her meatball recipe would be great for Spaghetti and Meatballs. I will be trying that!

The grilled cheese is to die for!

The meatballs were great in this soup, and you didn't have to fry or broil them before you put them in the broth. What a great and quick way to make a soup. Ive made this soup several times for many different people and they all loved it.

Rachel Ray has taken the fear out of soup making!! Very good & easy to make. We also like making the grilled cheese sammys & dunking them in the soup.

Made this super easy and delicious soup for dinner last night. Everyone loved it, even my two very picky children. My daughter went back for seconds searching out the meatballs. I made the meatballs with beef/pork mixture, they were excellent although being Italian I would add parsley to the mix next time.
I had it for lunch today and skimmed off the solid fat that was on top. I like the idea of letting it sit overnight to lower the fat content, but that ruins the idea of a quick meal.
