This recipe my son saw on 30 minute meals and wanted me to make it. I made the soup that night(I actually had everything to make it, also made the 4 cheese grilled cheese with it. The soup was so flavorful, the fresh spinach really makes a difference. Both of my kids ate the soup & so did my husband. Everyone loved it. The grilled cheese we were too fond of though. Soup we all gave an A+++++

This Rachel Ray soup is out of this world! It is easy to make and is always satisfying! The veggies cook up so tender and delicious! And the mini meatballs are very tasty. My family just loves this and it is one of my "regular" family dinners.

Excellent soup; easy and delicious.
To make it a bit healthier, I used ground turkey and whole wheat pasta.
The nutmeg gives these meatballs a wonderfully different flavor.

When I think about making soup, this is the first recipe that comes to mind. It is easy, tastes great, eye appealing, everything you would want in a hearty soup. I hope you make it and enjoy it as much as my family does.

I just finished making this soup and it is very good. I followed the recipe pretty exactly - only changes where I added a couple of boullion cubes and I boiled the pasta (used alphabets for my little one in another pot in hopes of it not sucking up all the broth. Really simple recipe and it tastes great! My 4 year old sampled it and gave it the green light!
