You can create up to five timers

1/2 cup mint jelly

1 lime, juiced

1/4 cup extra-virgin olive oil

1 melon, cantaloupe or honey dew, peeled, cut into 8ths and thinly sliced

4 radishes, thinly sliced

1/2 seedless cucumber, thinly sliced

1/2 medium red onion, thinly slicied

Salt and pepper

Mint sprigs, for garnish

In a medium shallow bowl, whish together jelly, lime juice and olive oil. Add the melon and veggies and toss. Season salad with salt and pepper and serve with mint sprigs.

    This a beautifully colorful salad that would be perfect for a refreshing summer side. It does get awfully liquid-y though, with all the juices from the melon, so I'd be sure to do a little draining before presenting it or cut back a bit on the dressing.

    What a fresh & flavorful salad ~ a welcome change from old standard mayo based salads, potato, mac & coleslaw etc. I wasn't sure about the combo of veggies & melon while prepping, but WOW, is it delish!!! The only change for me would be to either add more cucumbers, radishes and melon for the amount of dressing the recipe made OR cut the dressing in half. There is more than enough dressing the way it is written. It is a summertime favorite for us.

    Six of us felt it was a little too "watery" and that the flavors didn't really mix well. Maybe too sweet?
